Alumni & Happenings and Alumni Profiles

Faculty Feature | Kathrin Brunner

"I hope that students leave my courses with a deeper and more complex understanding of the various factors that affect our health and well-being. I also aim to equip students with resources and tools they can begin using right away to feel more empowered over their own health."

We asked Kathrin what she loves about teaching her courses and what she loves about IHN:

"I love that both of these courses expand "health" beyond what's on our plates. In Nutrition and the Environment we explore what it takes to grow food nutritiously and sustainably and we also examine how our exposure to pollution affects our health. From heavy metal contamination in consumer goods to micro-plastics, we take a broad look at where toxic substances occur and how we can take steps to minimize our exposure. In Psychology of Disease, we look at how thoughts and emotions affect our health, as well as broader determinants like our social connectedness and community support."

"I love the community at IHN. There is an overall warm and welcoming atmosphere both on campus and in the virtual classroom. The instructors and administrative staff go out of their way to support student success. The students themselves bring a diverse range of backgrounds and experiences, adding immense value to the classroom experience."

Dr. Jacqueline Cooper Lemmon, ND Talks Allergies & Immune System!

Dr. Jacs (pictured above) as she is fondly referred to at Atrium-Innovations, was a hit with students, visiting graduates, and faculty at IHN Toronto campus. Joining her was 2020 IHN graduate, Rebecca Dalal (pictured below) who is loving being Atrium's Retail Education Coordinator. It's one of the reasons Dr. Jacs came to campus. Rebecca was instrumental in putting together our first Co-op Placement with Atrium, working with their educational experts, naturopaths, medical advisors and marketing teams to build awareness at retailers about their professional lines and training webinars. Rebecca is still as effervescent as ever, and even prouder to be a CNP, after the warm reception from Elizabeth and the team at IHN. Dr. Jacs' talk, "Symphony of Fire: Allergies and the Unbalanced Immune System" was livestreamed with great questions coming from in-person and online attendees. Vancouver campus held a replay of the talk for in-class students, right after class. Toronto and Vancouver in-person attendees appreciated the Atrium Product Gift Bags. We have a few left! If you are a student or graduate and happen to pop by the campus, ask Jason (Vancouver) or Jaimattie (Toronto) if we have one for you!

Jade Herrmann Pops In At Toronto Campus With Plant-Based Alt-Yogurt!

Don't worry, Vancouver—Jade, the founder of Yoggu!lives in your city, and will be there before the end of May! She was in Toronto for a Vegan Tradeshow. You'll read her write, "With every cup, we are striving to change the foodscape to drive conscious consumption, promote delicious plant-based alternatives and loving environmental stewardship." She is serious about sustainability. We have all seen yogurt alternatives before and maybe you've seen Yoggu! before, but this was our first time—fantastic! Jade spoke to students on their lunch break from Preventive Health with Karim Premji, and touched on the different aspects involved in manufacturing and scaling a natural health product company, that included research and development, differentiating, packaging, consumer education through labelling, fillers, her focus on probiotics, necessary compromises and, of course, ingredient quality. No external manufacturing company would maintain her processes and standards, as she became too big for her home-based business, so she set up her own! She's now in 600 stores across Canada. Jade brought samples of her four coconut Greek-style yogurt flavours: Original, Vanilla, Strawberry and Mango. Yoggu! samples were left in the campus fridge for students to enjoy throughout the week.

Two Reasons to LearnBoth Equally Influence Change

Students choose to study at IHN for a variety of reasons. The common thread that unites them is their passion for holistic nutrition with a strong desire to bring change to the world. There are individuals who want to channel their life long enthusiasm for alternative health into their new profession. Others are already in the healthcare profession and diversify their modality portfolio to expand their clinical services. Still others, understand early on in their lives that holistic nutrition and traditional medicine is their calling and pursue the path wholeheartedly and with laser focus. An IHN education provides our graduates with skills that translate into an variety of professional opportunities.

IHN’s program also attracts individuals who struggle with personal health issues or witnessed friends and family suffer from acute and chronic maladies. Through their research, they were able to begin their journey towards optimal health. With the overwhelming amount of nutrition information that’s available, it can be difficult to discern falsehood from the truth, and managing one's health can be quite complex. The curriculum taught through industry experts at IHN teaches the foundational knowledge to acquire the expertise in becoming their own, trusted health advocates. Knowing how to navigate mainstream vs alternative, natural health information is paramount for true health and recovery. Personal study students have taken IHN's program over longer spans of time, one course at a time, over several years or immersed themselves full-time to apply the knowledge to their lives for immediate health outcomes.

People looking for wheat alternatives have turned to ancient buckwheat, a seed belonging to the rhubarb family, that has become a popular crop amongst farmers. In an October 21, 2022 article (4 minute read), Bridget Shirvell shares, “Over the years, thanks in part to a growing demand for gluten-free foods and interest in alternative flours, it has created a market for buckwheat as both a food and cover crop. Starting to grow it, though, was a risk taken out of necessity.” As a complete protein, it is small, mighty and versatile!

"These squash rings are made with our favorite, delicata squash. Delicata squash is breaded in a tasty grain free breading that we make with almond flour, sesame seeds and lots of delicious spices. We love how crispy these get just from baking in the oven, no deep frying required!" We recommend this Crispy Delicata Squash Rings by IHN graduates, Sarah Grossman and Tamara Green.
