HFP In Your KitchenIHN Online, Ontario Campuses

In our last edition, we featured students from IHN's Holistic Food Preparation (HFP) course at the Vancouver campus, where they are leading the transition back to in-person learning for the in-class program. Students who enrolled for studying at our Ontario campuses are still virtual, cooking in their own kitchens, as they learn alongside our exclusively remote IHN Online students. IHN Online classes are available to the global, holistic health minded community, in both Canada's Eastern and Pacific time zones. IHN Online was developed to ensure that no aspects of the in-class program were lost in a remote format, including IHN's HFP course. Covid 19 brought many challenges, but now, two years later, since employing the support of the internet, we're delighted to have had four semesters of delicious eats!

Faculty member Ana-Maria Miahi guided her students' creations (pictured above) during their February 25 to 27, three day dive into the world of holistic cooking, that included raw foods, soaking, fermenting, dehydrating, and Ayurvedic principles. As a graduate, possibly even from years ago, you likely remember your own HFP class, along with the adventure and connectivity it created for your group. For some of you, it may have even activated your passion to work in culinary nutrition. We are beyond grateful for the use of video communications to be with our students who have "come from away", and hope we are soon able to have our local students enjoy their HFP classes from our faculty's homes here in the Toronto and Mississauga area.

Quotes (below), from students, sharing comments about their weekend in HFP with Ana-Maria:

Alana G (Online ET): "Ana-Maria was lovely. She definitely made it easy to follow, and she was really patient. Ana-Maria created a really nice environment. It was like being in your own little cooking show. It [HFP] gave me a chance to buy vegetables and produce that I normally wouldn't have. Especially if you're not vegan already, it [HFP] gives you a chance to form your [meal] plans if you had a vegan client, and gives you some experience with vegan food to be able to recommend it to others. I'd never really made raw things before, so it really expanded my mind of what I could do in the kitchen with holistic ingredients and how I could make recipes even more nutrition for me, and how easy it is."

Maggie S (Online ET): "I like to cook as it is, but I feel I learnt a lot more than I expected to! We used a lot of ingredients I've never used before, and even going out to buy them, and now knowing where they're located, and where I can get them again was a huge help. It was fun getting the grocery list too, I felt like I was on a scavenger hunt! She [Ana-Maria] was amazing! I love that she did the recipes with us. I wasn't sure if that was going to be the case or not, and I think that helped immensely. The class was smaller, it really felt intimate, and our questions were answered right away, it was almost like a 1-on-1. I would recommend doing it [HFP] to expand your horizons in the kitchen."

Sharleen K (Online PT): "I liked that there was a variety of different dishes, and the fact that there were a lot of substitutions we could make, that will lend itself to dealing with a diverse set of clients. Meal prep [ideas] are very important to be able to recommend. I believe that we can't really recommend something if we haven't tried it ourselves. I think that these dishes can help with meal planning because people [clients] are typically so busy. There's work, there's school, there's family, there's stress, so these newly learned tools, even something like proper knife skills, can help us with whatever we do day-to-day."

It's Day 3 To Relax, Meditate, and Rejuvenate!

We hope students are taking time to let things go a little, breathing through awareness and chilling. Over the past two years, this week held three drastically different auras. In March 2020, as the pandemic reality was built, we reinvented our in-class only platform, to keep the school alive and provide uninterrupted education for all of our students. In March 2021, we marked the first year anniversary of IHN occupying an online space. We had found a rhythm, received student feedback, and were in optimization mode. The operative phrase for brick and mortar, local and global, businesses, organizations and academic institutions was, to pivot. This March Break, after two years of fist-clenched days, weeks and months, students and graduates need to know their support and encouragement, was the heart of our reformation. We have renewed hope for the longevity of IHN's In-class and Online programs. Campus and Online administration will be back, with our our offices reopening on Monday March 21, 2022.

Eva is as adorable, as she is uncompromising. This screen grab has her evaluating one of her online student's effort as they make Zucchini Pasta Alla Puttanesca. This moment perfectly demonstrated her intensity around making sure that students are getting things just right. Nothing goes unnoticed, or unsupported, under the watchful eye of this incredible earthly and divine, Master of Education.
Certificate Of Completion Courses From Wherever You Are!

If you want to take one of IHN's Con Ed courses but can't make the date or time, because you find yourself by a river, beach or on a mountain, learn through class recordings! Recordings are sent out next day before 12:00 pm Eastern. You learn along with the rest of the class. All links to the lessons are live for one month after the course ends. This allows you to keep up with your peers and have access to the faculty member. Our Con Ed courses are not pre-recorded. They are updated yearly and taught in real-time. That means questions for the faculty member can be answered via email or at the top of the next live class. WhatsApp or Facebook groups are created in order to bring all peers taking the class together.

The only component of the course that needs to be done on the same day as the other students, or proctored by administration at a time that works for you, are the tests and final exam. Our Con Ed courses have been accessed by students all over the world. There is full administrative support. IHN's Con Ed programming invites holistic nutritionists or natural health practitioners from all schools and programs across Canada, the US and the world.

Every so often you'll find a few jobs posted here as we transition. IHN's capacity to build Employment Opportunities had reached its bandwidth when we were mandated to close campuses and limit staff, back in March 2020. As spring approaches, so does the opportunity to rejuvenate the body, mind and soul. In a March 1, 2022 article (4 minute read), Newton described how tea supports detoxification! Biologist Jude Wang, in describing the health benefits of tea, stated that “[Good] tea embodies care, and through that, I hope that people will learn to care about themselves and about other people around them. White tea leaves offer anti-inflammatory and antibacterial properties”. We also learn that tea components, such as Catechins and L-theanine aid in the cleansing process. We love single origin teas and tea drinks, like Golden Milk Turmeric Tea, featuring the potent anti-inflammatory and antioxidant compound, curcumin.

Urtica dioica, or Stinging Nettle, is a herbal nutrient containing iron, magnesium, calcium, protein, B vitamins, and antioxidants. It has anti-inflammatory, diuretic, and detoxifying properties that can help reduce inflammation and eliminate waste and toxins from your body. It's the ideal ingredient for spring when we're starting to emerge from winter hibernation. Stinging nettle is very versatile, it can be used to make stews and soups, as well as brewed as a herbal tea, applied as an ointment, and eaten as a supplement. Let’s enjoy today’s recipe for a Nettle Frittata by IHN graduate Kristin Price.
