Is there a better time of year in Connecticut than October?
It begins with the final gentle breezes of that late Indian summer and ends with crisps nights, colorful leaves, terrified children (we're thinking Halloween) and apple festivals! We're loving the apple festivals.
Not to pick one apple festival over another but oh, boy does Southington do a great job. For two glorious weekends (Oct 2-4 and Oct. 9-11) you can enjoy a bounty of parades, musicians, floats, drum and bugle corps, apple puffs, apple fritters, apple pies, apple bobbing, apple queens, apple eating, a road race, a bed race (one wonders if it features an apple bed), kiddie rides and enough arts and crafts to whet your appetite for another apple or two.

Thought we'd provide a bit of help for those writing their college entrance examinations. We hope these pointers help.
* Never use big words when substituting diminutive alternatives would suffice.
* Parenthetical remarks (however relevant) are (usually) unnecessary.
* What's even worse...is when people overuse ellipses...constantly
* Eschew obfuscation.
* Foreign words and phrases are not always apropos.
* Eliminate quotations. As Ralph Waldo Emerson said, "I hate quotations. Tell me what you know."
* Exaggeration is a billion times worse than understatement.
* It behooves you to avoid archaic expressions. (It is incumbent on us to avoid them!)
* Avoid archaic spellings also.
* Hopefully, you will use words correctly, irregardless of how others use them.
* It is improper to carelessly split infinitives.
* People don't spell "a lot" correctly a lot of the time.
* The dash - a sometimes useful punctuation mark - can often be overused - even though it's a helpful tool some of the time.
* It is important to use italics for emphasis sparingly.
* About those sentence fragments.
* Avoid going out on tangents unrelated to your subject - not the subject of a sentence - that's another story (like the stories written by Ernest Hemingway, who by the way wrote the great fisherman story The Old Man and the Sea).
Note: People just can't stomach too much use of the colon.

Chipolte Shrimp with Mango Sauce
Makes 6-8 servings
INGREDIENTS
For the Shrimp
2 pounds shrimp, shell and tails removed
1/2 cup, plus 1 tablespoon olive oil, divided
8 garlic cloves, thinly sliced
1 tablespoon chipotle chile powder or chipotle seasoning
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon freshly chopped chives
For the Mango Dipping Sauce
2 cups ( about 1 pound) frozen or fresh ripe mango
2 tablespoons honey
1 teaspoon fresh lime juice
Pinch kosher salt
DIRECTIONS
1. Make the shrimp: In a large mixing bowl, combine the shrimp with ½ cup of the olive oil and garlic and toss.
Let marinate in the refrigerator for at least 2 hours or, preferably, overnight.
2.
While the shrimp is marinating, make the mango sauce: In a blender, purée the mango, honey, lime juice and salt until smooth. Transfer to a bowl and set aside. Makes 2 cups.
3.
Remove the shrimp from the refrigerator and discard the garlic. In a separate bowl, mix together the chipotle chile, salt and pepper. Combine the spice mixture with the shrimp and toss to coat.
4. n a very large cast iron skillet or saute pan, heat the remaining tablespoon of olive oil until it's hot but not smoking. Add the shrimp and cook in a single layer until opaque throughout, 1 to 2 minutes per side. Remove from the heat and transfer to a platter with the mango sauce and garnish with chives before serving.
