Microgreens
Microgreens are a type of plant that could be considered a cross between a sprout and a baby green. They’re nutritious, super aromatic, rich in color, flavor and nutrients.
While small in size, (1-3 inches tall) they are packed with antioxidants and extremely concentrated variety of vitamins and minerals ~ The nutrients in are up to 40% greater than the mature plant, making them a good addition to any diet.
Microgreens vary in taste, which can range from neutral to spicy, slightly sour or even bitter, depending on the variety. Generally speaking, their flavor is considered strong and concentrated. My favorite microgreens are sunflower, melon, and pea!
There are many ways to include microgreens in your diet.
They can be incorporated into sandwiches, wraps and salads and blended into smoothies or juiced. Another option is to use them as garnishes on pizzas, soups, omelets, curries and other warm dishes.
There is wonderful, knowledgeable vendor, Petite Produce, at the State Farmers Market. He can even set you up with a kit to easily grow your own!
