Peanut Butter Chip Ice Cream with Cottage Cheese

2 Servings

Ingredients

2 cups cottage cheese, whole-milk

1/4 cup maple syrup

1/2 cup peanut butter powder

2 Tbs chocolate chips, semi-sweet

 

1.  Add cottage cheese, maple syrup, and peanut butter powder to a food processor. Process until smooth and creamy.

2.  Pulse in chocolate chips.

3.  Pour into a loaf pan and freeze for 4 hours.

4.  Remove and let rest to soften for about 10 minutes before serving.

Studies have shown that slower eating may allow for a more thorough digestion of food. So if you're looking to make your meals even more enjoyable and nutritious, try eating without distractions and slowing down your pace. By slowing down and tuning in to how our bodies feel, we can ensure that we consume what our bodies need while getting the most enjoyment out of each bite.

Challenge: Chew each bite 30 times ~ harder foods may require more and softer foods, less. A good rule of thumb is chew to a liquid starte.
