Message from Lisa


As February draws to a close and we head into March, many of us are thinking of getting outside and getting in better shape. We have two employees who have been combining these thoughts with raising money for two very good causes. 


Mandy Vivelo joined The St. Jude’s 40 Mile Dog Walk Challenge to help raise money for St. Jude Children’s Research Hospital. St. Jude’s Children’s Research Hospital treats the toughest childhood cancers and pediatric diseases and a leader in cures for pediatric cancer through their research. Mandy included her fur babies (and her little human) in the challenge. The BEST part is that she raised money for a great cause! Mandy’s pack includes Rusty, an eleven year old red heeler mix who is the smartest dog Mandy ever owned; Gypsy Blu is a one year old blue heeler mix that she rescued last year; and the newest addition to the pack, Rhett, is a ten month old Australian Shepherd. Also featured, Mandy’s 5 year old son, who loves the outdoors and has claimed Gypsy for his own.

Our very own Angel Brewer took the American Heart Association's 60-mile challenge to honor her father, Rocky Brewer, who passed away after a heart transplant in 2017. The American Heart Association is the nation’s oldest and largest voluntary organization dedicated to fighting heart disease and stroke. Heart disease is the #1 killer worldwide, and stroke ranks second globally. Even when those conditions don’t result in death, they cause disability and diminish quality of life.

How Common are Slip and Fall Accidents in the Winter?

Slippery Surfaces: The most obvious cause of slip and fall accidents during the winter is slippery surfaces due to ice or snow. Even if you are wearing shoes with good traction, it is still possible to slip on slick surfaces. Radio Spotlight with Lisa Lanier

On Lawyer Up with Two Guys Named Chris on Rock 92, Lisa talks with the guys about age discrimination. Phil Regan is suing the Mets for firing him for being “too old.” A New Jersey restaurant is in the news after banning kids under 10. The guys want to know if that’s legal.


We also talk about the South Park episode that ripped Harry and Meghan and how upset they are - the guys want to know if they can sue. Listen Here

Lisa chats with Jared & Katie on on 107.5 KZL about a man from Singapore suing a woman after being friend-zoned. He is seeking $2.3 million in damages and claims the rejection caused him "sustained trauma" and depression. The woman being sued argues that she has been harassed. Listen Here

Baked Spicy Pimento Cheese 

Did somebody say football? Our own workers’ compensation attorney, Todd King, gets invited to lots of game day parties thanks to his Baked Spicy Pimento Cheese recipe. It's a huge crowd pleaser. Watch out if you are lactose intolerant because this dip is filled with yummy cheese. 







Ingredients:

 

  • 4 cups of shredded cheddar cheese - hand shredded preferred, but store bought will be fine. Tillamook is my favorite and bakes up nicely


  • 2 cups of softened Philadelphia cream cheese


  • 8 ounce can of pimentos


  • 1 cup of mayonnaise 


  • 1-3 teaspoons of cayenne pepper


  • Freshly ground black pepper


  • Sliced green onions (for serving)

Instructions:


  • Start by draining all water from the pimentos and set them aside.


  • Put the mayo, softened cream cheese, and 3.5 cups of the shredded cheddar in a large bowl and mix well with a wooden spoon.  


  • Once mixed, season to your liking with cayenne pepper and freshly ground black pepper. Mix the seasoning in well. Personally, I use lots of cayenne pepper, so sometimes I prepare two separate dishes for guests that don't like spice!


  • Once you have the seasoning just right, stir in the drained pimentos.


  • Put the entire concoction in a small/medium casserole dish and then top with the remaining half cup of cheddar. Bake for about 30 minutes at 350 degrees or until golden brown on top and bubbling.


  • Dress with sliced green onion and serve with celery, bread, crackers, crostini, tortilla chips, or whatever else you like.


  • Refrigerate the leftovers and enjoy cold the following day!
