Holiday Support for Youth Focus


We invite you to join Lanier Law Group, P.A. this season in supporting Youth Focus' ‘Gift Cards for a Cause’ campaign as our holiday initiative to give back. Youth Focus is a local non-profit that provides shelter and housing supports to youth experiencing homelessness ages 11 to 24. Two members of our staff volunteer their time at Youth Focus. Summer Foster serves as the board chair, and Ashley Sappenfield serves on the development committee.


Donations of gift cards in small increments ($10-$20) from retail stores like Target, Walmart, fast food chains, etc. would be appreciated. These gift cards will serve as a lifeline for these young individuals, allowing them to choose items that are not only essential but also offer them a sense of autonomy and normalcy during a time when they need it most.


We need your help to ensure they experience the magic of the holiday season despite their circumstances. These gifts can also be used throughout the year for birthdays, other holidays, and for the incentive program to promote positive behavior or to reward a youth for accomplishing a special goal during their stay.

Tuscan Chicken Tortellini

Ingredients


  • 1 tablespoon Italian seasoning
  • 1 table spoon olive oil
  • 1 clove minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1 package (20 oz) boneless skinless chicken thighs or breasts (if using breasts pound them to tenderize), cut in 11/2-inch pieces
  • 2 cups uncooked tortellini
  • 1/2 cup chopped drained sun-dried tomatoes
  • 1 large package of fresh baby spinach (at least 5 oz)
  • 1 package (8 oz) cream cheese, cut into cubes, softened
  • 1 cup shredded Parmesan cheese (4 oz)
  • 1 four oz package of diced pancetta or prosciutto
  • 1 cup of chicken broth

INSTRUCTIONS


  1. Add one tablespoon of olive oil to a large deep skillet or sauce pan. 
  2. Add garlic and pancetta. Brown the pancetta. 
  3. Add chicken and brown on all sides.
  4. Add Italian seasoning, salt and broth and pepper flakes.
  5. Add sun dried tomatoes and spinach, cooking until spinach is wilted.
  6. Boil water and cook tortellini in a separate pot.
  7. Stir in cream cheese and parmesan. Add more broth if you prefer it more soupy. 
  8. Stir in cream cheese and Parmesan cheese until cheeses melt. 
  9. Add tortellini and stir it all together. It is ready to serve immediately.
