I confess to an enjoyment of historical fiction which gives me a glimpse into people's lives in past ages where they are confronted with and are solving the same challenges we are experiencing today.

Yet I have come to appreciate the way a poet takes a profound concept and offers it in a beautiful message from which we can take inspiration and comfort. Take a peek at a short Tennyson biography. Like us, he faced and overcame challenges.

Stressed? Find Serenity with Animals
Do you ever wonder why interacting with an animal is calming?...why watching birds at the feeder is enchanting? ... why spotting a coyote, deer, skunk or possum is thrilling and causes us to snap a photo and share it with friends? Do you long to visit wild animals in Africa?
A Saint Louis Zoo study concluded that naturalistic exhibits in zoos can elicit positive physiological and psychological changes in zoo visitors, even lowering the blood pressure of some visitors!
The San Francisco Zoo's non-scientific observations support these findings! So we suggest a day at the Zoo, with your family, watching the delight of children as they visit the animals. Being there is good for your health! Thanks SF Zoo for the story!

The Real Reason to Cook A Turkey
Well, of course it's our tradition to cook a turkey for Thanksgiving!

After you've had your turkey dinner, made turkey pot pies and turkey/stuffing/cranberry sandwiches, it's time to put the carcass (you saved all the leg and wing bones) into the big pot, covered with water for a couple of hours on medium to low heat.
Cool, separate the meat and set aside. Skim off the fat. Return broth to pot. Add turkey bouillion, left over gravy, chopped and sautéed onion and celery, sprinkles of red pepper flakes plus a can of tomato sauce. Add back the turkey. Let it heat up.

Halve two lemons and remove as many seeds as you can find. Place them into the soup for about 10 minutes (no more!), remove and  squeeze the juice and pulp back the soup. Add finely chopped greens of your choice.

You’re almost ready. You’ve prepared a couple of cups of wild and brown rice. Ladle the turkey broth over the rice. Enjoy, because this simple, delicious soup is the real reason to cook a turkey!
