How is it that we are already halfway through the year? I really don’t know, but I am excited that summer is finally here. We can all agree that the weather has been great so far and perfect for BBQ’s and at home patio sessions for those who are not quite ready to hit the streets, even as the restrictions gradually start to lift.
Speaking of patio sessions. I received quite some amazing feedback from our last newsletter, after posting the recipe for the mouth-watering burger and lavender cocktail. I was eager to try a new recipe, so thank you to
for sharing her ice-cream recipe with me. I took her ingredients and added a sprinkle of my own flavour to it - stewed Granny Smith apples. I had this as
after indulging in one of the best burgers from Gladiator Burgers. I’ve included the ice-cream recipe for you, so go ahead and give it a try.
Vanilla Coconut No Churn Ice-cream
- 1 cup heavy cream
- 1.5 tbsp granulated sugar
- ½ tsp vanilla extract
- ½ tsp of your favourite flavoured extract
- Add all ingredients in a mason jar
- Cover the jar with a lid and shake for 5-7 mins (until cream thickens and there’s an increase in volume)
- Freeze for at least 4 hours
- Remove the jar from the freezer and leave on the counter for about 3 mins
- Scoop out ice-cream with a warm scoop
OK, so when I’m not planning out my next at home patio meal, I’m binge watching Billions on Crave. I don’t know about you, but Axelrod has given me a whole new level of cockiness that I need to exude. I mean, this man just does not skip a beat. I know some folk out there think Axel needs to get off his high horse, but hello, where can I sign me up?
And speaking of signing me up. It's pride month! Did you know that there's a Canadian Rupaul drag race that’s being released in July? I am so excited for it because in past seasons, we've seen a couple of Canadian drag queens on the show. Now, we get to watch a whole season dedicated to a Canadian cast. I was asked if there's anyone in particular that I’m rooting for to win. Quite frankly, not really, because the Canadians I know of have already been on the previous seasons.
And finally, with everything that has been going on lately with Black Lives Matter, I can say that one positive thing that came out of this month for me at least, was the Zoom group call that I had with 8 other ladies, some of whom I knew back in university and some new faces. It was a much needed check-in session, as we had a safe space to talk about our feelings towards the BLM movement. With this continued lockdown, we are all so secluded and have not been able to have conversations with our communities and so it was great to come together to talk about some of our experiences thus far.
I know it’s been hard for a lot of us, but know that it’s crucial to first and foremost take care of your mental health at such a time as this and to make sure that you’re supporting the people of colour in your lives. It’s needed right now.
