I love November—it’s the month that’s got it all! Election Day kicks things off with the opportunity to exercise our right to vote. Veteran’s Day reminds us to thank the men and women who have served our country protecting our freedoms. And then, of course, there’s Thanksgiving, which is the world’s greatest excuse to give thanks for those rights and freedoms we’re so privileged to enjoy!

 

In between those special days, we experience the brilliant colors, brisk temperatures, and shorter days that signal the turning of the page to winter. What’s not to love about all that?

The First Native American Woman in Space

Just in time for National Native American Heritage Month in November, United States Astronaut Marine Colonel Nicole Aunapu Mann blasted off on October 5, 2022 from Cape Canaveral, bound for the International Space Station on a mission to conduct research and testing. Colonel Mann, a member of the Wailacki of the Round Valley Indian Tribes from California, is an experienced pilot in the United States Marine Corps, previously deployed to both Iraq and Afghanistan and awarded six medals for her service. With this mission, she is also recognized for being the first female Marine to be a NASA Mission Commander. “I hope it will inspire young Native American children to follow their dreams and realize that some of those barriers that are there or used to be there are being broken down,” Mann said in an interview with the BBC.



Men's Shed Association

A sense of belonging and comradery is often lost as men grow older and their social situations change as they transition through life. The Men's Shed Association provides a safe and accepting place for older men to try new activities and serve the community. The "sheds" are an ideal environment for these men to get together to work on projects for the group or their local communities, learn new skills, and establish social connections by working with their hands and just shooting the breeze. Often, just getting together is enough, but building and tinkering with things adds a sense of accomplishment and self-worth that can counter isolation and depression. The Men's Shed Association motto says it all: "Men don't talk face to face, we talk shoulder to shoulder."



National Tie One On Day

Tie One On Day is celebrated on the day before Thanksgiving, a time associated with cooking and preparation of the holiday meal. EllynAnne Geisel, author of The Apron Book, created this holiday to celebrate the humble apron, as well as the people who wore them in the past and those who wear them today. In the spirit of the holiday, folks are encouraged to wrap a baked good in an apron, attach an uplifting note or card, and deliver the package to a neighbor, friend, or someone in need. On the busy day before Thanksgiving, taking a moment to show someone a simple bit of appreciation is what this holiday is all about.



Waxing On: The Karate Kid and Me

Grapefruit-Herb Salad With Coconut and Crispy Shallots

INGREDIENTS

Yield: 4 servings

  • ½ cup large unsweetened coconut flakes
  • 1 tablespoon neutral oil, such as grapeseed or canola
  • ½ cup raw, skin-on whole peanuts
  • Salt
  • 1 tablespoon granulated sugar
  • ¼ cup fresh lime juice (from 2 limes)
  • 3 tablespoons fish sauce
  • 1 to 2 bird’s-eye chiles, minced, or 1 teaspoon red-pepper flakes
  • 1 garlic clove, minced
  • 4 red grapefruit
  • ½ cup roughly chopped cilantro leaves and tender stems
  • ¼ cup Thai or sweet basil leaves, torn
  • ¼ cup store-bought crispy shallots

 

PREPARATION

Step 1

In a small saucepan over medium-low heat, toast the coconut flakes, stirring constantly, until golden brown, about 3 minutes. Transfer to a plate and set aside. Add the oil to the pan and heat over medium. Add the peanuts and toast, stirring constantly until fragrant and golden brown, 5 minutes. Season lightly with salt and transfer to the bowl with the coconut.

 

Step 2

In a small bowl, combine the sugar and 2 tablespoons water. Whisk together to dissolve the sugar. Add the lime juice to the bowl. Add the fish sauce, chile and garlic. Combine.

 

Step 3

Cut off the tops and bottoms of the grapefruits with a sharp knife. Slice off the rest of the peels in strips. Over a large bowl, use your fingers to pull the citrus flesh off the membrane in large pieces. You can also use your knife to slice the flesh off the membrane. Transfer the flesh to a large bowl. You should have about 5 cups fruit flesh with some juice in the bowl.


Step 4

To the bowl of citrus, add half of the cilantro, all the basil leaves . Pour in ¼ cup dressing and toss gently to combine. Add the coconut and peanut mixture, and toss with a couple more tablespoons of the dressing. Transfer to a serving platter. 


Top with the remaining cilantro leaves, spoon over the remaining dressing and sprinkle with the crispy shallots.
