Laguna Beach Unified School District Nutrition Services Supervisor Lourdes Uraga presented to the board an update on the school meal program, which provides students two meals a day, breakfast and lunch. Recent equipment upgrades have increased storage capacity and cooking space, allowing for more fresh fruits, vegetables, and scratch-cooking.
School nutrition programs must adhere to meal pattern requirements established by the state, which require that meals remain within certain caloric and sodium specifications, amongst other requirements. Working within those requirements, staff have introduced new recipes that mirror menu items at student-favorite restaurants, such as Chipotle and Laguna Beach local La Sirena Grill. In the 2023-24 school year, the program will focus on increasing scratch-cooking in school meals and changing packaging to reduce waste to support the district's commitment to sustainability.
