Food trends for 2017 for Texas as Seen by a Texan
Lighter, fresher and more vegetables.  Poke and cauliflower "hot" last year are still in for 2017.  Perhaps the Poke craze is just taking longer to catch on and to have really good Poke on the mainland of the USA, it's a Hawaiian staple.   Kale is OUT but its up for grabs what will take its place.  
More veggies, more meat alternatives and American's are "getting" into exotic ugly fruits like Jackfruit.  Ugly outside but delicious inside, I think we are just intrigued - how can something so ugly be so good??? Asian countries have known this secret for centuries. 
Alternative grains and flours like: Almond flour, chickpeas (garbanzo beans) plus the flour.
Waste not- take all those veggie cuttings, peelings and scraps- make sauces, soups and alternative veggie dishes. 
Less sugary beverages!!!  More water and non- sugary healthy drinks- less soft drinks than ever. 
Lessor known cuts of meat- probably at high prices in restaurants like fried pig's tails, chicken hearts (didn't we eat that as kids and loved it??) Beef tongue- really a delicacy?  I had to eat that as a kid growing up in the Midwest. 
As for Houston Hit Foods.....New Year's Drum Roll
Beef Bone broth- how about Pho- a Houston hit food with some of the best Pho in the US. 
Do we in Texas think BBQ is going out of style?  Never, not with the splurge of local neighborhood joints, pit BBQ's, meat market BBQ restaurants and BBQ food and entertainment venues. 
Hand in hand with the BBQ are the Texas craft brewies- we hit 257 licensed craft breweries in Texas in 2016.
Texas hit a record for the number of ongoing and new BBQ cook-offs- get ready for the Rodeo!!

Healthy Recipe

Winter Salad with  Kale & Pomegranate

10-12 big leaves of kale (250-300 g)
1 pomegranate
2 apples
3/4 cup almonds (100 g)
2 Tbsp red wine balsamic
                                 1 Tbsp honey
3 Tbsp red wine balsamic or a cherry vinegar
3 Tbsp olive oil
1 tsp honey
1 tsp dijon mustard
Salt & pepper

1. Heat a pan and dry roast the almonds for 1-2 minutes. Add the balsamic and as soon as it is gone add the honey and stir for 1 minute. Transfer almonds to a baking shed and let them cool. Afterwards chop them coarsely.
2. Wash and dry the kale. Remove the stems and use a food processor or mini chopper to chop the kale into a very fine texture. You can use a sharp knife.
3.  Prepare the pomegranate  and cut the apple into thin boats and mix all of it it with the kale.
4. Make the dressing by stirring everything thoroughly together and season to taste (The balsamics can vary a bit in sweetness and flavour so make sure you adjust the amount you use according to your own balsamic).
5. Stir everything together and serve. This salad is great the next day and even the day after that.

organization represented by students across the Houston area. 
Each month you'll meet a different member who will share their
perspective on living a healthy life.  

Jason Few, Historian
St. John's School - Houston, Texas
Teen Board Member 2016 - Present

Jason is a sophomore at St. John's School and is a strong student and athlete. He is a member of the football, basketball, and lacrosse teams. Jason also speaks Spanish and was recently chosen to travel to Costa Rica with his high school. He will be building homes and teaching English at rural primary schools to Costa Rican children. Jason is also a member of the Entrepreneurship club and Jack and Jill of America, Inc. Houston chapter. Jason enjoys skiing and snowboarding, playing all sports, and hanging out with friends.

Studies show that American's tend to gain 1 or 2 pounds in November and December, due to the Holiday Season, with the average being five pounds.   As a result, here are my healthy tips to help stay fit this New Year.

Picking New Year's Resolutions
  • This New Year, try to pick resolutions that will increase your health mentally and physically.  For example, try to eat more fruits and vegetables, or attempt to buy only organic products instead of processed food. These simple changes in your lifestyle will drastically benefit your health, resulting in a better physical appearance and mindset. Whole foods and Trader Joes are great grocery stores, which have lots of organic and GMO-Free products.
  • Go outside and play sports with friends, walk your dog, or run at the park. Exercising is very important because most of us did not exercise a lot during winter break, so it is essential that we exercise daily again. If you need help finding exercises, there are several apps that can give you different workouts and track your progress: Body Builder, My Fitness Pal, and 7 minute workout are great free apps to help you get in shape.
  • Sleep is an essential part of our health, which we are often deprived of due to school and extracurricular activities. 2017 is a great time to go to sleep earlier and gain the sleep that you need. Teenagers need at least 8 hours of sleep a day, and there are apps that can help you reach this goal: Sleep Cycle alarm clock and Sleep Bot are helpful apps to regulate your sleep.
