Neirano Pitule Moscato d'Asti

Moscato d'Asti is a semi-sweet, lightly sparkling, low-alcohol wine from Piedmont, northwestern Italy. The classic Moscato d'Asti wine is characterized by elegant floral aromas and notes of peach, apricot and fresh grape juice. It is one of Italy's most famous and most popular wines. Moscato d'Asti should be drunk young, just a few years after bottling. This crisp, refreshing wine brings brightness to rich, spicy soups like,

Viking Oak Smoked Coarse  Sea Salt

This is a Danish Oak smoked sea salt that conjures up images of Vikings, and invites the cook to experiment. The sea salt is smoked gradually over an open fire comprising of mainly oak wood, in the same way that the Vikings smoked salt many years ago. The salt has a strong bonfire-like aroma and a natural smoky taste that is particularly enjoyed by vegetarians and carnivores alike. A favorite with vegetarians, it is excellent on vegetables. Delicious sprinkled generously over a roast chicken. It is also delicious sprinkled generously over meat about to be thrown onto the BBQ. Mainly used as a seasoning and in dry rubs, smoked salt also works well as a finish with vegetable dishes. Just let your imagination go. Try crunching some smoked pyramid flakes over green beans or brussels sprouts before serving for a hint of the unexpected. This is a salt for all seasons with a taste reminiscent of the great outdoors.

Chipotle Carrot Soup with Red Apple Balsamic Glazed Bacon

  • 6 slices bacon 
  • 1/4 c Red Apple Balsamic
  • 1/4 medium onion chopped
  • 1 1/2 lb carrots, peeled, and sliced
  • 1 T Chipotle Infused Olive OIl
  • 2 T honey
  • 2 3/4 c water, vegetable or chicken stock
  • sea salt 
  • fresh, thinly sliced scallions 
  • 4 T créme fraîche, or sour cream
  • a few thin slices of red chili
  • Chipotle Oil as garnish
  • 1 red apple, julienned, for vegetarian option
  • juice of 1/2 lemon
  • sprinkle of paprika to finish
  • 1. Preheat oven to 400˚. Lay bacon on a sheet tray and baking rack. Using a pastry brush, brush balsamic on both sides. Bake for 20 minutes, basting with more balsamic every 5 minutes. Remove from oven.
  • 2. Heat chipotle oil in a medium sauce pan. Add onion and a pinch of salt. Sweat at a med-low heat for 8-10 minutes.
  • 3. Add carrots with a pinch of salt and sweat for 10 minutes more. Add in honey and lemon juice.
  • 4. Cover the carrots with water or stock and simmer for 20 minutes until carrots are tender. Pure in a food processor or blender, adding more liquid if necessary to reach desired consistency. Add seasoning if desired.
  • 5. Ladle into warmed bowls. Garnish with a dollop of créme fraîche, red apple, bacon fresh scallions and chilis and a drizzle with Chipotle oil.
  • 6. Vegetarian option; Toss apple slices with red apple balsamic, scallions, chilis and garnish over cream fraîche or sour cream and a sprinkle of paprika for added smokey flavor.

Carmel Apple Wine Spritzer

A fun twist on the same old mimosa
  • 1 bottle Moscato d'Asti (Vita Sana's highlighted Neirano Pitule Moscato d'Asti)
  • 2 tbsp. caramel
  • 2 tbsp. cinnamon sugar
  • 1 cup apple cider
  • 1 apple, cut in slices for garnish
  • 1 bottle caramel flavored vodka (optional)
In a small dish, pour caramel sauce and in another pour cinnamon sugar. Dip the rim of champagne flutes in the caramel and then the cinnamon sugar. Pour in apple cider, Moscato d'Asti and a small amount of caramel vodka for an extra kick. Garnish with apple slices. Great for ringing in a sweet New Year!
Saigon Cinnamon
Also known as Vietnamese Cinnamon, is an evergreen tree indigenous to mainland Southeast Asia. Despite its name, Saigon cinnamon is more closely related to cassia than to cinnamon, though in the same genus as both. Saigon cinnamon has 1-5% essential oil in content and 25% cinnamaldehyde in essential oil, which is the highest of all the cinnamon species. It is primarily used as a ground spice, or as an essential oil. You can also find it medicinally marketed as a digestive stimulant and an astringent.
