Rob Reiner - A legacy that understood the importance of early childhood - brain development, strong families and systems to support these efforts in all 58 California counties.


The early childhood community mourns the tragic loss of Rob Reiner, whose vision led to the 1998 passage of Proposition 10 (First 5) supporting children ages 0-5. His work fundamentally transformed how California invests in its youngest children, elevating early childhood from an afterthought to a policy priority that continues to benefit families across all 58 counties.

Roasted Spaghetti Squash with Tomato Sauce

Age Group: Ages 3-5

Serving Size: 6


This fun squash is an interesting way to serve vegetables in a dish that is appealing to kids.


Ingredients

  • Nonstick cooking spray
  • Spaghetti squash, fresh, whole 10 ½ oz
  • Tomato Sauce ¾ cup
  • Garlic Powder ½ tsp
  • Italian seasoning, dried ¼ tsp
  • Mozzarella cheese, part-skim, shredded 3 Tbsp
  • Basil, fresh, chopped (gently wash basil under running water before cutting) 1 Tbsp



Directions

  • Wash hands with soap and water for at least 20 seconds.
  • Preheat oven to 400 °F
  • Lightly spray a baking sheet with nonstick cooking spray. Set aside.
  • Soften spaghetti squash by cooking for 2–3 minutes in the microwave. Remove from the microwave.
  • Cut spaghetti squash in half, lengthwise. Using a spoon, scrape out seeds.
  • Place squash on baking sheet with hollowed-side down. Bake for 45–50 minutes or until a fork will easily go into the peel. Heat to an internal temperature of 140 °F or higher for at least 15 seconds.
  • While squash is cooking, place tomato sauce, garlic powder, and Italian seasoning in a small saucepan. Stir. Heat on medium heat for about 5–7 minutes. Heat to 140 °F or higher for at least 15 seconds.
  • Remove squash from the oven. Carefully turn over. Use a fork to scoop the squash out of the peel. Place contents in a medium bowl.
  • Combine squash and seasoned tomato sauce. Toss.
  • Serve ⅓ cup of squash topped with ½ Tbsp cheese. Garnish with basil. Serve immediately, or keep warm at 140 °F or higher.

This year's campaign is all about "Powering the STREAM in Amador" where educators' efforts power brighter futures. Each month providers will create and implement a science, technology, reading, engineering, art or mathematics activity. Then they send in a short write up on the activity. *Bonus if the activities fall in more than one category.*

Amador Quality for Kids Update

All licensed family child care providers and private preschool center staff in Amador County are eligible to participate in this county-wide quality improvement initiative! If you are interested in getting signed up, please contact us to request information and participation forms. It's simple to sign up, you can earn a wide variety of exciting stipends, and benefit in so many other ways!
