Lemon-Basil Ricotta Crostini over Mixed Greens with Roasted Red Peppers

Ingredients
  • 6 cups mixed greens
  • 1 small baguette, sliced into 1/4"-thick slices
  • 1 10-oz. jar roasted red peppers, drained and sliced into thin strips found at Vita Sana Olive Oil Co.
  • 1/2 cup ricotta cheese
  • 1 small bunch basil, finely chopped
  • zest and juice of 1/2 lemon
  • salt and pepper to taste
  • Lemon Olive Oil from Vita Sana Olive Oil Co.
  • 2 tbsp. Champagne Balsamic Vinegar from Vita Sana Olive Oil Co. 

Directions
  1. Preheat oven to 400 degrees F. Lightly drizzle Lemon Olive Oil over bread slices, making sure to coat both sides. Arrange on a baking sheet and bake 8-10 minutes on each side, or until light brown and crisp.
  2. While baguette slices toast, combine ricotta, basil, lemon juice and zest and salt and pepper to taste until well-incorporated. Set aside.
  3. Toss greens with 2 tbsp each of Vita Sana Lemon Olive Oil and Vita Sana Champagne Balsamic Vinegar.
  4. To serve, heap a small pile of dressed greens on a salad plate. Smear about 1 tbsp of ricotta mixture on 2-3 baguette slices and top each slice with 1 or 2 pieces of red pepper and a grind of pepper. Top greens with crostini and serve.

These peppers are a perfect stand-in for fresh peppers in recipes that call for them.

Great in salads, on sandwiches - puree into a spread, or dip. Use in soups, sauces, and appetizers. Puree with a bit of fresh goat cheese for a mind-blowing roasted red pepper and goat cheese spread.

Pecorino Romano
 
Pecorino is a term used to define Italian cheeses made from 100% sheep's milk. However, the American counterpart of the cheese is made from cow's milk. Of the four Pecorino cheeses that have received Protected Designation of Origin (PDO) status under European Union law, Pecorino Romano is one of the most ancient types of cheese as well as the most famous outside of Italy. As per legislation, production of Pecorino Romano is allowed only on the islands of Sardinia, Lazio and in the Tuscan Province of Grosseto. All these varieties differ from each other, depending on how much they have aged.

Pecorino Romano is one of most widely used, sharper alternatives to Parmesan cheeses. Because of the hard texture and sharp & salty flavour, Pecorino Romano is an excellent grating cheese over pasta dishes, breads and baking casseroles. Although, the use of the cheese is limited because of its extreme saltiness. Pair it with a glass of big, bold Italian red wine or a light beer.
