Asian American and Pacific Islander
Heritage Month (AAPI) May 2023
| |
May is Asian/Pacific American Heritage Month – a celebration of Asians and Pacific Islanders in the United States. A rather broad term, Asian/Pacific encompasses all of the Asian continent and the Pacific islands of Melanesia (New Guinea, New Caledonia, Vanuatu, Fiji and the Solomon Islands), Micronesia (Marianas, Guam, Wake Island, Palau, Marshall Islands, Kiribati, Nauru and the Federated States of Micronesia) and Polynesia (New Zealand, Hawaiian Islands, Rotuma, Midway Islands, Samoa, American Samoa, Tonga, Tuvalu, Cook Islands, French Polynesia and Easter Island).
Asian American Pacific Islander Heritage Month celebrates all of the Asians and Pacific Islanders in the United States who have made the country what it is today. During this month, the country celebrates the achievements and remembers the struggles endured by Asian Americans and Pacific Islanders.
The month of May was chosen to commemorate the immigration of the first Japanese to the United States on May 7, 1843, and to mark the anniversary of the completion of the transcontinental railroad on May 10, 1869, when "East Meets West." The majority of the workers who laid the tracks were Chinese immigrants.

Gastronomy Tourism - Flavors of Korea | |
Japchae is a Glass Noodle Stir Fry. In the Korean language, Japchae means ‘noodles mixed with various vegetables.’ It is made with sweet potato starch noodles stirred with various fried vegetables such as carrots, spinach, mushrooms, and onions. The dish is then seasoned with soy sauce and sesame oil.
Kimchi is a Korean family of well over 100 different vegetable pickles eaten as a side dish, a wrap and as a condiment. It is the most famous Korean dish, made and eaten in both North and South Korea, and increasingly popular in the West. Kimchi is essentially Korean fermented cabbage -similar to sauerkraut but seasoned with garlic, ginger & Korean chilies. Because it's a fermented food, it boasts numerous probiotics. These healthy microorganisms may give kimchi several health benefits. It may help regulate your immune system, promote weight loss, fight inflammation, and even slow the aging process.
Tteokbokki (spicy rice cake) is one of the most popular Korean street foods in Korea. It is a spicy chewy rice cake made in a gochujang (red chili paste) sauce, soy sauce, sugar, and garlic...eat in moderation.
Korean rice cakes—are made from rice that's steamed and pounded to create a distinctively chewy texture. The word mochi is a Japanese word that simply means “rice cake.”
Bulgogi, or Korean beef barbecue, is undoubtedly one of the most quintessentially Korean dishes there are: gorgeously thin slices of ribeye, tenderloin, or sirloin marinated in a savory-sweet sauce made of soy sauce, garlic, ginger, sesame oil, sugar, and Korean pear juice and quickly grilled on a barbecue or stove-top griddle. It's marinated for several hours which flavors and tenderizes the meat. The flavor of bulgogi is savory, salty and sweet, and not spicy. Bulgogi can be eaten with steamed rice in a lettuce wrap, and a drizzle of creamy gochujang aioli or bean sauce.
Bibimbap is a very healthy dish given that it predominantly consists of protein mixed with a variety of nutritious vegetables, and rounded out with carbs from the rice, making it a very well-balanced, nutritious meal in a rice bowl.
Soondubu jjigae (also spelled sundubu-jjigae) is a spicy Korean stew featuring pieces of silken tofu braised in a spicy, briny broth packed with umami from dried kelp, dried anchovies, and fish sauce. Gochugaru (Korean chili flake) or gochujang (fermented chili paste) and kimchi add heat.
