Shopping List for Dinner Menu:
*serves 8: 2 tacos per person*
  • 1 medium carrot, small sweet potato, or small zucchini
  • ¼ medium head lettuce
  • 2 large tomatoes
  • 4 ounces low-fat cheddar cheese
  • 1 (15½-ounce) can low-sodium pinto beans
  • Non-stick cooking spray
  • 1 pound lean ground turkey
  • 1 (15½-ounce) can chopped or crushed tomatoes, no salt added
  • 1 Tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 16 taco shells 
*Chef Laura will also offer a vegetarian/vegan option by substituting tofu for the turkey*
Chef Laura’s Favorite Fruit Smoothie Menu:
*serves 4*
  • 1 cup 100% apple juice
  • 1 cup soy or almond milk
  • 1 cup low-fat vanilla yogurt
  • 2 cups of frozen strawberries
  • 1 frozen banana, sliced
  • 2 Tbsp. toasted wheat germ
  • 2 Tbsp. ground flax meal

  • Box grater
  • Can opener 
  • Colander
  • Cutting board
  • Large skillet
  • Measuring spoons 
  • Sharp knife
  • Vegetable peeler
  • Blender for Smoothie
