Neeraj Tayal, MD is an Internal Medicine physician at Martha Morehouse who has been a local leader in community gardens and has extensively used OSU Extension Services to create an award winning community garden in Clintonville.
 
During this month’s Culinary Medicine event, he will discuss soil testing, seed selection, seed starting, container gardening and other aspects for starting one's own garden.

Whether you are a novice or a master gardener- this night has plenty to offer for everyone. Dr. Tayal has incorporated the essence of fresh-grown foods for a healthful diet in the treatment of chronic diseases with the residents he teaches at OSU. Please plan on attending to expand your own gardening knowledge and become aware of local resources. 
 
In addition, we invite you to cook along with Rosemary E. Riley, PhD, LD as she utilizes garden-to-table ingredients to create a delicious and healthy Spring Pea Salad.

Shopping List for Dinner Menu:
  • 5 ounces mixed spring greens (be sure to include some arugula)
  • 6 radishes cut thin
  • 1 cup snap peas (thawed or quickly blanched for 2-3 minutes if fresh)
  • 2/3 cup frozen peas (highest quality you can buy. You can use fresh English peas they will need to be blanched for 2-3 minutes then cooled).
  • Half an English cucumber, sliced
  • 4 ounces feta cheese
  • Additional options: Asparagus cut in 1-inch pieces, blanched, avocado cut in chunks.

Vinaigrette
*try making the day before to let the tarragon flavor develop*
  • 2 Tbl of fresh lemon juice or bottled
  • 1 1/2 Tbl of good extra virgin olive oil.
  • 3 tsps chopped fresh tarragon or more to taste
  • 3 tsp honey (depending on how tart the lemon you may need a bit more)
  • 1/4 tsp salt
  • 1/4 tsp pepper

  • pan for blanching peas
