Southwest Salad the Vita Sana Way

Ingredients
  • 2 tablespoons lime juice
  • 2 tablespoons VS Pomegranate-Quince White Balsamic Vinegar
  • 1 clove garlic, minced
  • 1/8 teaspoon Hawaiian Black Lava Sea salt
  • 1/4 cup VS Chipotle Olive Oil
  • 1 15-oz. can black beans, drained and rinsed
  • 1 8 3/4-oz. can whole-kernel corn, drained
  • 1 pint grape tomatoes, halved
  • 8 cups mixed greens
  • 2 -3 avocados, chopped
  • 4 cups shredded skinless meat from 1 rotisserie chicken
  • 1/4 cup red onion coarsely shopped
Instructions
 
1. Whisk together lime juice,  VS Pomegranate- Quince white balsamic vinegar , garlic,  black lava salt  and  VS Chipotle olive oil .
2. In a large bowl, combine beans, corn, avocados and tomatoes; toss with 2 Tbsp. of vinaigrette.
3. Divide greens among 4 plates. Top with chicken, bean mixture, and onions. Drizzle with remaining vinaigrette.

  • Gummy bear molds 
  • 2-quart saucepan 
  • Whisk 
  • Spatula
  • Squeeze bottles or baster
Instructions
  • Get the molds ready: Place the gummy bear molds on a rimmed baking sheet and make sure there is room in your refrigerator for the baking sheet to sit flat.
  • For non-alcoholic gummy bears skip step 2 and ensure your wine temperature exceeds 90 degrees.
  • For alcoholic gummy bears ensure in step one the temperature does not exceed 90 degrees.
  1. Place the wine, sugar and gelatin in a saucepan over 
    medium low  heat (if you want to keep the alcohol in, make sure to keep under 90 degrees). Whisk for 2-3 minutes or until sugar and gelatin have dissolved. (Stir in the pink food coloring if making Rosé gummy bears)
  2. Using a glass measuring cup with a spout, pour the mixture over the gummy bear molds. Use an offset spatula to get rid of the excess and ensure all the molds are filled.
  3. Refrigerate for at least 90 minutes.
  4. When gelatin has set, bears will easily pop out from  mold .
  5. Store uneaten  gummy bears in an airtight container in the refrigerator.
