Woody Candy Company

Woody Candy Company is the oldest candy manufacturer in Oklahoma. The candy company was founded in 1927 by Lucille and Claude Woody Sr. in Oklahoma City. Woody Candy Company has been family-owned and operated since its inception, passing from the founding generation to Claude Woody, Jr. in 1983. Claude Jr. ran the company for more than 30 years, and painted the fine portrait of his father that still adorns the Oklahoma City candy shop.

In February 2014, Bill and Elaine Jackson along with son Brian took the reins at Woody Candy Company. With Claude, Jr. now acting as President Emeritus, the company has welcomed Brian Jackson as its new leader. A former logistics officer in the U.S. Navy, Brian is the third generation of veterans to head Woody Candy Company. With the new leadership, the principles that have guided Woody Candy Company since 1927 remain the same. Quality, freshness and making the best candy possible remain our top priorities. Over the past nine decades, Woody Candy Company has perfected the most popular American candies.

Suitability of Sodium Acid Sulfate as an Antimicrobial Intervention for In-shell Walnuts - Ravi Jadeja, Food Safety Specialist

Walnuts, among other nuts, have been implicated in numerous foodborne illness outbreaks and recalls. The current research investigates the suitability of novel and naturally derived compound sodium acid sulfate (SAS) to improve the microbiological safety of walnuts.   

Research findings suggest that SAS is a superior antimicrobial to the traditional chlorine-based sanitizers used by the walnut industry.  The efficacy of SAS is not affected by organic matters present in the wash water; therefore, the antimicrobial agent can be reused several times. The research was conducted by Dr. Conner McDaniel and Xin Mei Teng (undergraduate student) under Dr. Jadeja’s supervision.
