BBQ Ideas

Makes 6 Servings


Stuffed Burgers recipe by The Bite-Sized Baker:

  • 2 ½ pounds ground beef
  • 1 egg
  • 1 medium onion, chopped
  • 1 jalapeno, diced and seeded(or some jalapeno white balsamic)
  • 3-4 cloves of garlic, minced
  • ¼ cup breadcrumbs
  • ¼ cup BBQ sauce
  • 2 tablespoons chipotle in adobo sauce
  • 2 teaspoons garlic salt
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 6 slices of pepper jack cheese (Sold @ Vita Sana)


  1. In a large mixing bowl, break up ground beef with hands. Add egg, chopped onion, jalapeno, garlic, breadcrumbs, BBQ sauce, chipotle in adobo sauce, and season with salt and pepper until thoroughly incorporated.
  2. Divide the meat into 12 even thin patties, about ½ inch thick. Place one slice of cheese in the center of 6 patties. Top each patty with another patty and seal the edges.
  3. Grill burgers over medium-high heat, flipping once until cooked through.
  4. Serve burgers in toasted buns with desired garnishes.


Even on a clean grill food can stick when placed directly on the rack. Reduce sticking by oiling your hot grill rack with an extra virgin olive oil soaked paper towel: hold the soaked paper towel with tongs and rub it over the rack.

Semi-Soft Cheese
Pepper Jack Cheese
The term "semi-soft" is used to describe cheeses that have a smooth, generally, creamy interior with little or no rind.  These cheeses are generally high in moisture content and range from very mild in flavor to very pungent.  Semi-soft cheeses may be made from both pasteurized and raw milk, depending on the aging requirements and the style the cheesemaker is creating. 


Pepper Jack is a derivative of Monterey Jack, the original "American" cheese invented by Mexican Franciscan friars of Monterey, California. As the name suggests, the cheese is flavoured with sweet peppers, rosemary, habañero chilies and garlic and spicy jalapeños for an extra kick.

This semi-soft, open textured cheese is spicy to taste yet leaves a delicate and buttery taste in the mouth. It is often eaten with quesadillas, crackers or on hamburgers. Pepper jack can also go well with jalapeno peppers, melons, grapes, pickled vegetables, and olives.
