Wright-Hennepin (WH) is appearing in many community events. The Fourth of July parades in Annandale and Delano were a big hit, but it's not too late to see our big yellow trucks at other events!

WH's next community events will be at Maple Grove Days (July 14-17) and the Wright County Fair (July 20-24)!

July's no-bake recipe
Vegetables and pasta in a slow cooker
Slow Cooker Extra Vegetable Pasta
Ingredients
  • 3 cups elbow pasta
  • 1 red onion, peeled, halved, and sliced
  • 2 cloves garlic, crushed or finely chopped
  • 40 sugar snap peas
  • 3 medium carrots, sliced
  • 1 bell pepper, sliced
  • 1 heaping cup corn, fresh, frozen, or canned
  • 1 large handful kale or spinach
  • 1 1/4 cups cherry tomatoes
  • 3 cups tomato puree
  • 1 handful fresh basil
  • 2 1/2 cups vegetable stock
  • 1 tablespoon balsamic vinegar
  • Salt & pepper, to taste
Directions
  1. Prepare vegetables.
  2. Add pasta and all herbs and vegetables to slow cooker.
  3. Add the tomato puree, vegetable stock, and balsamic vinegar. Season with salt and pepper and mix well.
  4. Set slow cooker to high for two hours.
Recipe notes: Do not cook on low, the pasta will get mushy.
