Dear Shipmates,

We're just starting our third trip of the season.  It's been great.  The picture above is from our first lobster bake.  Boy were they good.  The schooner is just waiting for us to come back aboard for our delicious (and decadent) strawberry short cake.

Hope you'll be able to join us for some of our special trips.  Race week is coming right up on July 1st and is exciting and fun including some row boat races with lots of cheering.  After that there is a mid-July 3-day and it's great for parents and grandparents to bring younger sailors to have the time of their lives.

For "Summer Sailing" you can join us for our July 15th trip.  We have no schedule except to sail each day, anchor every night, enjoy a lobster cookout and get back to Rockland late Saturday morning.

Hot from the galley oven


While aboard for a trip, a young sailor named Ben helped name our special chocolate cake that we serve with Capt. Linda's Ice Cream.

Hot Fudge Cake

Mix together:
1 2/3 c. flour
1 c. sugar
1/2 c. cocoa
1 tsp. baking soda
1/2 tsp. salt 

Add and beat until smooth:
1 c. sour milk* or buttermilk
*To make sour milk add 1 Tbsp apple cider vinegar to the milk and stir 
1/2 c. vegetable oil
2 tsp. vanilla

Spread in greased 8" x 8" pan.  Do not flour the pan. 
Sprinkle over the cake (be generous!):
1/3 c.  cocoa
1/2 c.  brown sugar
3/4 c.  chocolate chips

Just before baking, pour 5/8 c. boiling water over the cake.

Bake at 375 degrees for 20 to 30 minutes until cake seems cooked but is VERY gooey and not burned to the bottom of pan.  

Serve hot with vanilla ice cream. Yum! This is sure to be a favorite.

Vanilla Ice Cream

This recipe is for a 6-qt hand crank ice cream freezer.

Mix together
8 eggs, beaten
1 1/2 c. sugar
1/2 t. salt
3 T. vanilla
1 qt. milk

Fold in  2 pt. medium cream, partially whipped.
Put in ice cream freezer and crank until it's hard to turn the crank.  Best to put it in the freezer for a few hours to let it finish firming up.

Our Father's Day cruise is just starting.  One dad is 88!!!
One son is 10.  Parents and children are so thrilled to be aboard.  As one mom said, "This is a trip of a lifetime."  They love the cabins and everything else.  We can't wait to sail across the bay.   We're going to have such a great time.



We're so looking forward to all these great trips.
