Hugs to you on the second Wednesday of June!

Today we get to learn about Dave and Kathy, who did a great job writing their biography!

Dave was born and raised in Parkston, a small rural town in southeastern South Dakota. Dave grew up and has remained Lutheran. Living in the town of Parkston, his dad and family were engaged in farming as well as a bulk oil and gas jobbership. As a young man Dave and his siblings helped out at the farm and business. Life centered on school, church, work, music, sports and horses! Dave and his younger brother were very close in age and best friends for life. When not helping out a bit with work around home, business or farm, they could be found up to some type of mischief or misdeeds.

Dave has a Bachelor of Arts in Political Science/Pre-Law from Augustana University in Sioux Falls, South Dakota. Dave spent 40 years in the banking business, mainly management of retail banking and later specializing in management of residential and construction loan production and marketing. Dave finished his career and retired from First National Bank of Omaha, the nation’s largest privately-owned bank, in 2015.

Kathy is from Brighton, Colorado, in the Rocky Mountain foothills. It seems she always had some type of part-time job; one of them was in the box office at a local theater. She was famous for mowing the lawn and loved her ‘57 Chevy and Mustang. She attended Brighton Public Schools, Denver University, and University of Houston studying Business Administration. Kathy was raised Baptist, later became Methodist and joined the Lutheran faith after meeting Dave. Kathy worked in various business administration positions specializing in Human Resources and Office Management. She worked in HR for Enron in Houston and later law firms in Nebraska.

Kathy and Dave were introduced by mutual friends in Omaha, Nebraska, in 2006. After a couple of visits they hit it off, literally: playing 27 holes of golf on their third date. “That continues to be our most frequent couple’s therapy.” They were married in 2008.

Dave and Kathy moved to Prescott from Omaha, Nebraska. Approaching their retirement years, they searched for a year-round moderate climate and discovered Prescott after friends had visited the area while seeking their retirement home. After several years of following northern Arizona weather, reading of life in the area, and visiting a few times they decided to make Prescott Valley their home. They sold our properties in Nebraska, quit their jobs, and decided on a home in Quailwood. While their new house was under construction in 2017, they rented an apartment in Prescott. They visited several churches, were impressed by Pastor Kirk and Emmanuel’s atmosphere, and soon joined Emmanuel. Kathy helps with communion. Dave is active in choir and music, and assists with altar prep.

Kathy and Dave’s trips and vacations include visits to their timeshare in Puerto Vallarta, frequent golf getaways, and traveling to visit old friends and family in the Valley, Southern California, Colorado, Houston and the Midwest.

Dave has played golf from an early age including high school and college teams, and competed in many tournaments and events. Other activities include music at Emmanuel, walking/hiking and all types of exercise. Kathy also burns up a lot of energy walking/hiking, playing golf, bingo, sewing and crafting with friends. They have a very close-knit group of friends socializing and getting together for card games.

Along with traditional holiday/family fare, Kathy makes a mean Bierock, a German favorite, which is a pastry roll stuffed with meat (usually ground beef), cabbage and onion. Check out a recipe on the right!

Dave’s family has a very tasty tavern recipe (think sloppy joe) passed down for more than 60 years. These sandwiches were a huge favorite at Parkston High football games “back in the day”.

They also enjoy grilling out—filet, burgers, brats, fish and veggies—and Italian food. Gabriella’s in Prescott Valley is a favorite as is our Sunday evening pizza from Papa Murphy’s. Since most of our “funny” family stories come at Dave’s expense, they’ll share them at a later time (as in never).

Bierocks

The flavorful combination of beef and cabbage stuffed in a fluffy roll makes German Bierocks the perfect hand-held food to go along with your Oktoberfest beer.

One of their main activities has been keeping up with two grandchildren—Trinity: 13 years, and Elliott: 18 months. During the pandemic Dave’s daughter Sil, black lab Fritz, and newborn Elliott lived with them all last summer as Dave and Kathy provided childcare in their home. Kathy stays in close contact with Trinity: keeping up with her school and tennis accomplishments.

"The pandemic was tough at times as we both lost brothers and close friends due to COVID and other health conditions."

“We really enjoy our new life in Arizona. Although we sorely miss our kids, grandkids and family scattered around the country, we are blessed by God as we remain active in retirement and have so many new friends.”

A Bible verse for today:

Kathy's:

Do not be anxious about anything, but in every situation, by prayer and petition, with thanksgiving, present your requests to God.

Philippians 4:6 NIV

Dave's:

But if we walk in the light, as he is in the light, we have fellowship with one another, and the blood of Jesus, his Son, purifies us from all sin.

1 John 1:7 NIV
