Chitosan (kahy-tuh-san):
This is a fining agent that is used to clarify beer and wine. It is derived from chitin that is extracted from the outer shells of ocean crustaceans. Often combined with Kieselsol, Chitosan will clarify the beer or wine in a short time and then is siphoned away as part of the sediment. Chitosan has no allergenic properties.
