It has been quite a Fall at Kol Israel Foundation with vibrant programming reflecting every aspect of our mission. This quarter’s Kveller highlights the Annual Fall Memorial, participation in the ADL Walk Against Hate, continuation of KIF’s education program, and, of course, the success of the casino-style fundraiser, Roll with Kol, which attracted more than 200 delighted guests. As we celebrate Chanukah, close out 2022, and look toward 2023, you can count on KIF’s steadfast commitment to Resilience, Remembrance, and Holocaust Education.

From the KIF Kitchen
Cinnamon Applesauce
Top latkes with this sweet, easy-to-prepare version of a seasonal favorite.
4 lbs. assorted apples (about 8)
up to 1/4 cup sugar
1 cup water (or a little less if using juicier apples)
pinch of kosher salt
1 tablespoon lemon juice
1/4 teaspoon ground cinnamon (or more to taste)
cinnamon stick (optional)
Peel, core, and chop apples. Place in a large pot or a slow cooker and add remaining ingredients.
If preparing on stove, bring to a simmer over medium-high heat, stirring occasionally. Reduce heat to medium-low, cover, and cook 18-20 minutes until apples are soft.
If preparing in slow cooker: Cook on low for 3-4 hours until apples are soft.
Once apples are cooked, remove cinnamon stick (if used). Using a potato masher, mash apples to desired consistency. Taste and adjust sugar and cinnamon, if needed.
This recipe is extremely forgiving. You can omit the sugar and/or cinnamon, or adjust the amount according to the sweetness of the apples and/or your preference.
