NATIONAL WINE AND CHEESE DAY | JULY 25
On July 25th, we celebrate the ultimate pairing of wine and cheese. National Wine and Cheese Day provides an opportunity to sample some of our favorites.

The pairing of wines and cheese has been a regionalized tradition. Across wine-producing cultures, many pair their regional wines with local cheeses. For example, the French Brie region is noted for its tannic wine varietals. Their Beaujolais goes well with the Brie produced in the area. However, that doesn’t stop a sommelier or cheesemonger from making other recommendations to their clientele. 
Although regional preferences may take precedence in distinct areas, don’t hesitate to accept a sommelier’s suggestion. Sommeliers understand a developing palate. Through experience and skill, they guide those new to wine tasting through the basics. In addition, sommeliers keep sophisticated wine lovers abridged of the latest varietals.
Equally important is the knowledge of the cheesemonger. They’ve developed a knowledge base beyond mold and yeast. Because cheese tops more than a burger or a salad, cheesemongers stay updated on the latest cooking and wine trends. Their highly developed palate leads cheese and wine lovers to the best pairings and satisfying results.

Tales of the Cocktail 2022
Tales of the Cocktail Foundation invites the global drinks community to return to New Orleans for its 20-year anniversary from July 25 – 29.
With hundreds of opportunities developed specifically for industry professionals from bartenders to distillers, Tales of the Cocktail® is the drinks industry’s leading conference for exchanging new ideas, products, and techniques. This year’s event will feature in-person education, tastings, networking, and awards programming. While programming at our host hotel, The Ritz-Carlton, New Orleans, starts on Monday, July 25, this year also features “Pre-Tales” kick-off events starting Sunday, July 24.
To toast this momentous occasion, Tales of the Cocktail 2022 will return with a curated lineup of seminars, events, and, of course, imbibing all in the name of “progress” — the festival’s official 2022 theme. Chosen for its recognition of the nimble and adaptive development of the drinks industry, “Progress” showcases the transformative atmosphere and nature of the resilient cocktail community.

Chef Jimi Setchim Presents Prix Fixe Menus Paying Homage to Creole Cream Cheese

New Orleans, Louisiana—Broussard's Restaurant has announced its summer seasonal menu will pay homage to a Louisiana staple, Creole cream cheese. Chef Jimi Setchim chose to highlight the intriguing and often forgotten item that was once a staple of the South Louisiana household because it is an authentic heritage food that embodies the history and lifespan of our city. The special prix fixe dinner and brunch menus will run through the end of August.

Creole cream cheese was an essential breakfast item across New Orleans, a sweet, tart, and mildly salty dairy product with the texture of yogurt. Made by mixing skim and whole milk with rennet, a natural enzyme that breaks down dairy, Creole cream cheese was vital to the early New Orleanians. It allowed them to extend the life of their dairy and create a farmhouse-style cheese. Originally created by the French settlers, Creole cream cheese takes its roots from crème fraîche. The natural bacteria in the air would cause the curd and whey in the milk to separate. Left hanging in the shade of a tree, the liquid whey would drip off, and the remaining solids would curdle together into a wonderful cream.

"For our Summer menu, I wanted to show off how versatile Creole cream cheese is," said Chef Jimi. "The saltiness is used to counter the sweetness of corn in a macque choux and in a summery puree. The Creole cream cheese tartness is paired with fresh herbs to make an exciting Green Goddess dressing. Its tang is used to deepen the richness of grits. And of course, the myriad ways its sweetness can enhance desserts – paired with spiced gingersnap crust in a cheesecake and used to balance tropical passion fruit in a classic tart."

Chef Jimi's Creole cream cheese prix fixe dinner menu includes a choice of starters: summer peach and avocado salad with goat cheese, toasted almonds, and Creole cream cheese green goddess; or Gulf shrimp persillade with grilled corn and Creole cream cheese macque choux, pecans, and parsley pesto. Featured entrée choices are Creole moules frites with alligator sausage and Creole cream cheese and herb aioli; pan-seared duck breast with Creole cream cheese grits, pickled peppers, roasted peach and bacon glaze; and crispy pork belly porchetta with Creole cream cheese and summer corn puree, pecan pesto, pickled peppers and shallots, and peach and passion fruit glaze. Prix fixe dessert options include Creole Cream Cheese & Passion Fruit Tart with a lavender shortbread crust, passion fruit and peach coulis, and toasted pistachios; and Creole Cream Cheese Cheesecake with gingersnap crust, bourbon peach compote, and mint coulis. The price of this menu is $55 per person.

The Brunch prix fixe menu offers the summer peach and avocado salad or duck and alligator sausage gumbo for the starter course. The entrées are peach pain perdu with Creole cream cheese and bourbon peach syrup or Louisiana blue crab quiche. The featured dessert is English toffee bread pudding with dark chocolate and salted caramel. The price of this menu is $47 per person.

Monthlong P.O.W.E.R. Plates Women’s Fundraising Program , July 21
 
NEW ORLEANS
The monthlong celebration of women in the state’s hospitality industry is part of Fidelity’s “Potential of Women Entrepreneurs Realized” (P.O.W.E.R.) program, which caters to thousands of female-owned businesses. Currently, program officials are seeking women-owned, women-managed or women-led restaurants and bars to participate in the annual fundraising program. The goal of the program is to raise awareness and drive business to women-led restaurants in South Louisiana during the slow summer business months.

The Louisiana Hospitality Foundation and Fidelity Bank are matching donations up to $2,500 for this year’s program. After a record 67 restaurants and bars participated in 2021, officials have set a goal of recruiting 75 restaurants throughout South Louisiana. Neat Wine is the participating wine sponsor and a special beer for the program was released by Port Orleans Brewery.

NATIONAL HOT FUDGE SUNDAE DAY | JULY 25
On July 25th, National Hot Fudge Sundae Day takes a turn representing National Ice Cream Month in delicious style. Feast on this tasty ice cream dessert that combines hot and cold with a cherry on top. Even more important to note, this dessert has been served since 1906. 

Given that the hot fudge sundae is a variation of the classic sundae, making one is a cinch. Simply put a couple of scoops of vanilla ice cream in a dish. Add hot fudge sauce. Top it with a dollop of whipped cream and some nuts (if you like). Finally, add a single, bright-red, sweet, maraschino cherry.
Sundae History
While the oldest known record of an ice cream sundae is an Ithaca, NY advertisement, the originator of the dessert is still debated. The October 5, 1892 ad in the Ithaca Daily Journal spelled the ice cream treat with the conventional day of the week spelling – Sunday.
However, Two Rivers, Wisconsin claims Druggist Edward Berners served the first ice cream sundae in 1881. According to the story, customer George Hallauer ordered an ice cream soda on a Sunday. Ordinances at the time prohibited the sale of ice cream sodas on the Sabbath. Even so, Berners came up with a compromise. He served the ice cream in a dish minus the soda.


Additionally, he topped it with chocolate syrup. Given the day, he called it a Sundae. One interesting catch – Berners was 18 at the time the story takes place.
Ithaca’s claim to the ice cream sundae takes place at Platt & Colt Pharmacy in 1892 where Reverend John M. Scott stops to order a bowl of ice cream. When Chester Platt, proprietor, began preparing the ice cream for his customer, he didn’t stop at just a couple of scoops of vanilla. Platt drizzled cherry syrup over the ice cream and topped them with a bright red, candied cherry. The dessert looked and tasted so delightful it required its own name. Since the day was Sunday, it was named for the day it was created. Ithaca also has historical evidence supporting the story, including an advertisement for a Cherry Sunda

During Prohibition, several Beer Manufacturers , such as Anheuser Busch began selling "Ice Cream" which survived their company through the prohibition era.
Adolphus Busch, who had immigrated to St. Louis from Germany in 1857, married Eberhard Anheuser's daughter, Lilly, in 1861. Following his service in the Civil War as a Union Soldier, Busch began working as a salesman for the Anheuser brewery.
Busch purchased the shares of the company in 1869, and took over the responsibilities of the company when Anheuser passed away.

RECIPE OF THE WEEK:
Fig and Goat Cheese Flatbread
With fig season being short and oh so sweet, this recipe is a seasonal favorite and current staple for Market Umbrella staff. Being able to source half the ingredients from market, we might as well call this a summer market flatbread. With few ingredients, little preparation time, and figs, this recipe is a must try!
Ingredients
  • 1 flatbread (store bought or homemade)
  • 2 onions
  • 2 oz of goat cheese
  • 1 tablespoon of olive oil
  • ¼ pint of figs
Directions
Chop onions, caramelize by sauteing on medium heat with 2 teaspoons of olive oil for 30-60 minutes, stirring often.
Prepare flatbread by brushing with remaining olive oil, layer caramelized onions, goat cheese, chopped figs. Bake at 425° F for 10 minutes.
Ta da! You have a delicious summer market flatbread. And if you're really trying to maximize your market ingredients, drizzle with honey, and/or garnish with bee pollen. DELISH!

We’ve got it Fig-ured Out!
Figs are here y’all, but be warned - the season is just as short as it is sweet. If you’re a fig lover like us, get ‘em while you can. Fresh figs should be plump and soft, without bruising or splits and are most flavorful when served at room temperature. They’re highly perishable, so store them in your fridge and wash them right before eating, just like you would a strawberry. Sweet figs pair well with rich dairy so dishes with yogurt, cheese or custard are a sure bet. They’re great in baked goods and other sweets, and also stand up to a more savory treatment, as in a salad or pizza with a salty cured meat, and a bracing sour/vinegar component. If you’re looking to save the season, they make excellent preserves and are great dried.
Thanks to the geographic diversity of our vendors (different vendors are in season at slightly different times), you can expect to find figs for sale at market for 3-4 weeks. Find fresh figs and fig preserves from Figue Envie at the Thursday Mid-City and Tuesday Uptown markets - the fig balsamic preserves are a must try! Monica’s Okra World and Isabel’s Produce and Tamales at all three weekly markets also carry a more limited quantity. This versatile fruit is a special treat, so don’t miss out!

Figue Envie is making their annual market appearance! Owners and fig farmers, Mandy and Byron met while serving in Mali as agricultural volunteers in the Peace Corp. Now the husband and wife are teachers in New Orleans, but they spend their summer vacations connecting with their farming roots. After tending to fig trees on family land since 2006, they purchased a new plot which has allowed them to quadruple their production. You can now find their fresh figs and delicious preserves at the Uptown and Mid-City markets.

City Recycling Opportunities
City of New Orleans’ Department of Sanitation announced that the City’s Recycling Drop-Off Center, located at 2829 Elysian Fields Ave., will be open weekly on Saturdays from 8 a.m. until 1 p.m. This temporary shift from bi-weekly drop off is in response to a higher demand for recycling while curbside collection is suspended.

Residents participating in the drop-off events should plan for longer than normal wait-times; the New Orleans Police Department will provide traffic control support to help the events run smoothly.

The WWOZ Groove Gala is back IN PERSON! This benefit for WWOZ will take place on Thursday, September 1, 2022. This year's performers include John Boutte, Irma Thomas, Bruce Sunpie Barnes with Amanda Shaw, Al "Lil Fats" Jackson, Meschiya Lake, and Doreen Ketchens. WWOZ's own Neil Pellegrin will DJ! .

This is not your average gala-- it's an indoor festival! We'll have music on three stages around Tableau with fabulous food and drink flowing. Head over to Le Petit Theater once the mainstage show begins, and then back into Tableau for an 'OZ DJ set dance party and dessert bar.

returns to Lafayette Square Park (602 St. Charles Ave.) in New Orleans for its 15th edition on October 14-16, 2022. 

Charlie Musselwhite and Ruthie Foster will top the bill at the festival, which is presented by the New Orleans Jazz & Heritage Foundation, the nonprofit that owns Jazz Fest. Admission is free and open to the public.

​​The Crescent City Blues & BBQ Festival is an award-winning event, featuring two stages of music, a large selection of the best barbecue vendors in the region and a local arts market.

The festival will be held on Friday, October 14 from 5:30pm to 8:30pm, and Saturday, October 15 and Sunday, October 16 from 12:00pm to 8:30pm.

Performers at the 2022 edition include Charlie Musselwhite, Ruthie Foster, Robert Finley, Walter Wolfman Washington, Kenny Neal, Mr. Sipp, Jon Cleary, Johnny Sansone, Little Freddie King, Trudy Lynn, Mia Borders, Mem Shannon & the Membership, Joy Clark, Eric Johanson, Layla Musselwhite, Dk Harrel, Kevin & the Blues Groovers, and Wolfe Johns Blues Band.

The Blues & BBQ Festival was last held in-person in 2019 before the COVID pandemic. In 2020, the festival was produced online by the Foundation and its radio station, WWOZ 90.7 FM New Orleans, as “Blues Festing in Place.”
