Why Processing Is Not an Accurate Measure of Nutrition Quality

The government recently put out a request for information about ultra-processed foods as they consider putting forth a formal definition, and the WGC team submitted comments. We believe that nutrition policy best supports public health when it focuses on nutrient density/quality rather than processing. We worry that categorizing products based on their processing status could have unintended consequences, grouping healthy foods with unhealthy foods, and steering people away from foods they should be eating, such as whole grains.

Whole Grain Resources & News

Touring the Brooklyn Granary & Mill

For Whole Grains Month, we took a field trip to Gowanus, Brooklyn to visit the Brooklyn Granary & Mill. Opened in early 2025, this flour mill and bakery hybrid is a love letter to the art of milling, driven by the passion of its founder, Patrick Shaw-Kitch.
