All the little Ghost, Goblin, Princess Poppy, and Spiderman costumes can be put away. The candy wrappers will be around for awhile if the kids had a good Halloween evening. Wheewww, Halloween is over...

...and there are just 8 Fridays until Christmas!

Don't kill the messenger--just take the messenger's advice. While it is nice and quiet this weekend, get a few pieces of blank paper and start your holiday lists. The headings should be "Christmas Presents" with everyone noted that you usually treat (including the next door neighbor, even if it is just a bottle of wine or a plate of cookies.) Next pages--entitled "Thanksgiving Dinner," "Christmas Eve Dinner," and "Christmas Day"--will help you determine the menus, who will bring what, the new recipes to try, and start your grocery lists.

Pre-purchasing holiday foods and storing in the dry pantry, refrigerator or freezer actually saves you time and money. You aren't fighting the crowds at the grocery who didn't plan ahead, and you don't impulse purchase anything that doesn't fit into your menu or gift plans! See how smart you are? We will be happy to help you in the planning stages, too... come in to taste and plan your cheese board, make notes or take phone photos, consult with our cheesemongers regarding timing and amounts. CHEESE CENTRAL's shop hours are as usual throughout November, with the exception of Thanksgiving Day. We are closed, of course. Friday, 11/23, is Black Friday and we are open 10am-6pm. Saturday, 11/24, is Small Business Saturday and the start of our Downtown Holiday Open House. We will have hot drinks, treats, maybe even a little music to entertain you. Downtown merchants will be sponsoring free horse and carriage rides, the City tree lighting ceremony, photos with Santa, and all 'round good cheer! Sunday, 11/25, completes the Open House weekend, and our hours are as posted. Remember, free parking for unlimited time in the parking garage, with entrances on Pine St. or Elm St. and Sacramento St.

DRINK WHAT YOU LOVE

Holiday entertaining doesn't mean you must cater to everyone else's tastes when you host the party. Plan your party foods. It is your house, and you have planned the food that suits your style--purchase the adult beverages that you enjoy with your appetizers or meal! A single alternative, and a non-alcoholic choice, is all you need to stock. Too many choices confuse guests, and are not budget friendly.

TIP: A good bottle of bubbly, especially one made locally, is an inexpensive way to treat guests--it is the holidays after all--and bubbles are a great way to celebrate, with any type of food! If you acquire bubbles from abroad, look for the words "cremant de Bourgogne" on the label. "Cremant" means it is made in the Champagne method, and "Bourgogne" indicates the grapes used are Chardonnay and Pinot Noir.
A MUSTARD-Y TRICK

Holiday aces up your sleeve in the recipe arena... Mustard!

A sharp, tangy Dijon mustard from France (brands such as Maille, Moutarde de Dijon, or Eric Bur made in Dijon, France with strict French guidelines) will give you the base for the following easy recipes:

Mustard Mascarpone Bruschetta
Whisk together 1/2 C mascarpone, 1/4 C chopped fresh basil, and 3 T Dijon mustard in a small bowl. Season to taste with salt and pepper. Spread on crusty bread.

Creamy Dijon Vinaigrette:
In blender, pulse together to combine 1/4 C red or white wine vinegar, 1 T Dijon mustard, 1 T honey, 1/2 t koshser salt, and 1/2 garlic clove. With motor running, slowly add 1/2 C vegetable oil. Season to taste with freshly ground black pepper.

Mustard-Citrus Beef or Pork
In small bowl, blend together 2 T Dijon mustard, 1 T chopped garlic, and 1 t crushed red pepper flakes. Season 1 lb. beef steak or pork chops with salt. Coat with Dijon mixture. Cover and chill for 4 hours. Let stand at room temp for 1 hour. Grill or pan fry meat to medium-rare. Finish with a squeeze of fresh lemon juice.

We have chosen foods from various states of Mexico to highlight authentic recipe preparation. Got your attention, huh? hehehe Inspiration for this topic was random, as a PBS show highlighted special foods prepared for a centuries-dead royal personage, as found in an archaelogical dig. Research brought so many wonderful recipes to share--this yummy class will feature special dishes from around the world--for an international culinary tour, if you will. A fun and informative booklet complete with recipes for the full dinner in class, served with adult beverage. Come cook with me! RIJSTAFFEL

Dutch for “rice table,” rijsttafel (“ryst-tah-fell”) is a by-product of Dutch colonialism in Indonesia, which, if we count the days of the Dutch East India Company, stretched for more than three centuries, formally concluding in 1949. When the Dutch returned home, they brought with them the practice of serving many small Indonesian dishes, revolving around rice. An excellent dish for young and old, this is not spicy (unless you choose to make it so!), and without out using any unusual ingredients, our modern-day rijsttafel is the same exact idea. We will present a simple, stream-lined Rijsttafel party to liven up the dreary late winter days! Just show up hungry...  Registration ends 2/3/19 Minimum of 8 guests, maximum of 10
