I'm sending this weekly email to give you a heads up on what is available and especially good for your weekend grill and entertaining. Each week it will highlight a selection of the best fish available in Chicago. Some you may be familiar with and some you won't but they are all worth trying!

This is just a cruel tease heading into our cold season. Maybe if we are lucky, Indian summer will be upon us this week
We will be featuring the belly warming(at least) fish from the islands. I have been offered some great choices on some outstanding Hawaiian fish that will be shipped directly to Dirk's.
Bigeye Tuna, Mahi Mahi, Hawaiian Snapper, Marlin, Opah and more. All sustainable, all super fresh and all ready my mouth is watering.

All Hawaiian fish will be $3.00 per pound off the regular price.

Here is the update that I received from my supplier today concerning the rest of king crab season...

"Our first two deliveries this year were from the Cost Recovery quota that we bid on and won from Alaska Fish and Game. The harvest of this quota pays for the observers that Fish and Game places on fishing vessels to monitor the resource as it is harvested. As we expected, the Japanese have taken a very aggresive postion on Alaskan king crab. With the Open Access fishery commencing on October 15th, the final price negotiations have been completed. The final pricing agreed on by the Japanese and the processors is significantly higher that what we were able to obtain the Cost Recovery crab for. Beginning the week of October 25th, our delivered price for fresh crab will have to refelect this price.
The final price settlement is affecting all crab both fresh and frozen. There is going to be a very minute amount of frozen Alaskan packed crab making it's way south this year. We will be upating our frozen pricing for the upcoming year as the available frozen product is very limited.
Due to the strength of the Japanese YEN and the strongest demand we've seen in years from Japan, prices are the highest we've ever seen. We don't see this situation changing this year and in the foreseeable future.
Increased costs are never pleasant to share with customers but we feel an obligation to keep you well informed about market condition and expectations for the coming year. We value all of you and appreciate your support."

Next weeks crab will be coming in on Friday, October 22nd. This will be the last fresh crab before the price increase.
The new price will be $45.00 per pound for any crab purchased after October 25th.

Fresh King Crab is an outstanding specialty item with a limited season, even more so this year. I hate to increase the price but really have no choice in the matter. For those of you that have not yet bought any this year, next Friday's shipment will be your last chance to try this awesome product at the lower price.
I would appreciate some feedback as to your thoughts of how much crab I should purchase next week. I have to place my order by Monday. If you want to get in on the last best price, please call and place an order. We will continue to purchase fresh king crab but will have to pay the higher price.

Not To be overshadowed by the King crab, we are getting our first shipment of Live Dungeness crab from Bellingham, Washington. Caught fresh by our friend Brad, they are shipped directly to us. Awesome crab at a great price, especially compared
to the king crab.
