2021 … A Time for Freedom

I choose Freedom. The Freedom to dream. The Freedom to contribute. The Freedom to create positive energy by showing love and caring for others. The Freedom to explore.

When I last spoke with you via the December issue of Serving With Caring Hearts, we were about to embark on another loss of the Freedom to enjoy the company of others, a meal in our favourite restaurants, a visit to our preferred destination and making turns on our favourite ski hills. 

I wrote in that issue the Province-wide Shutdown would cause each of us new challenges. But, I also wrote I was confident that we would overcome the Shutdown just as we overcame those dark days in April last year. 

Today is not a dark day. It is a beautiful winter day in Collingwood as we look forward to Family Day weekend. A chilly beginning but lots of glorious sunshine, more snow than at any time this winter with our cross country and hiking trails open to provide Freedom for fresh experiences.  

Over the past six weeks, I have considered what lessons we can learn from this pandemic and what beliefs have sustained me and all of you during this challenging time.

We learned simple things. 

How to celebrate New Year’s Eve during a pandemic. How to enjoy take-out food from your favourite restaurant, watch sports without fans in stadiums or arenas, shop by a curbside pickup. The list goes on.  But each of you adapted to a new and very different world of Freedom.

We learned life lessons.

Once again we learned the difficult lesson that we do not have absolute control of our future in life. But we do have hope, faith, and positive energy. By striving to do good deeds each day and be kind to each other we will sleep well and live out our lives fully by God's grace.

We now know that facing the challenges of the pandemic in each of our lives is too big a burden for one person to overcome. But we’ve also learned that each of us can make a difference by contributing our humble capacities to helping others.

To master our lives, our minds and the mental challenges posed by this horrific pandemic, we need to intentionally balance our lives, physically and mentally. For many of us, this is a new learning.

We have learned - despite of our life’s limitations – that we can extend more love and build on positive people relationships that will lead us to a more rewarding life journey. We have learned to count our blessings like health and more family time that we may not have considered as blessings in normal times.

All of this to say, we have learned that we have the Freedom to choose how we face COVID: while we may have more worries and more mental stress, we can choose to be inspired to have a more positive mindset.

At Living Water Resorts, we continue serving inspiring experiences to our guests with a caring heart. This is a core belief that sustains us as we begin each day.

As a company, we believe that when we take care of our staff with love, the staff will naturally take care of our guests with love.

The pandemic challenged us to make good on that belief. 

As you likely know, the Shutdown announcement resulted in the closing of some of our business resulting in the temporary layoff of many team members.  We decided to show love and care to each of our laid off staff by connecting with them via Zoom to provide a needed human touch. We have a food basket program for each of the families each Friday containing steaks and nutritious items.

I believe that Freedom also means, “Let's dream and it will come true.”

My dream for Living Water Resorts comes true every day for each of the past 29 years that I have owned the resort.

Our new Phase IV will be ready for occupancy before the end of February increasing our accommodations to over 400 rooms/ suites. Phase IV has a private theatre for exclusive family use of our guests, more water view suites so you don't need to travel to the Islands 

We’re also planning a transformed all-inclusive, carefree retreat vacation experience.

A destination vacation in which guests can experience Collingwood and Living Water's offerings: learn more of Collingwood's Awen Gathering Place, Collingwood's history called Chicago in the North, local artists, our company's culture that will inspire you in your life and your work, and open space for you and your loved ones to reconnect. Our unique condo suites with living, dining, and kitchen spaces will offer you a home away from home vacation.
 
In closing, I believe that God is sovereign and He will take care of us as we face this future of uncertainty and the absence of our Freedoms.

I know that faith and hope will endure us through the days. I pray for God's grace and learn more wisdom from Him so that we are more confident, courageous and compassionate.

A Communication Update to our Valued Guests
  
We wish to update you about our adapted operations.

The resort remains open for your enjoyment. We’ll continue to serve you with fresh open spaces as we always have done. We will continue to follow increased safety protocols across the resort.

  • As we go to press with this newsletter we have learned that our regional health code status will be Red beginning on Tuesday, February 16. Please check with our website to confirm the changes in our operations.

  • Lakeside Seafood & Grill is open to provide Takeout and Contactless Room Delivery for Hotel Guests. Kindly check our Lakeside website to learn about changes in dining options as we enter the Red health zone.

One thing that has not changed is the 700+ Acres of Fresh Experiences at Living Water Resorts! With miles of nearby snowshoe and cross country ski trails, nearby waterfront parks, and quaint downtown Collingwood shops offering curbside pick up. There is still so much to enjoy during your stay at Living Water Resorts!

We look forward to continuing to serve you and provide a healthy and safe vacation.

Larry Law Awarded the Order of Collingwood
Our CEO and Founder Larry Law is a recipient of the 2020 Order of Collingwood. 

This annual Award is awarded by the Town to an individual who demonstrates “exemplary volunteerism within the community by people who make Collingwood an enviable place to live, work and play".

In Larry's humble reaction to receiving the Award, he spoke of the resort's years of contributions to the local community and the strong team at the resort who share a strong belief that wants to serve with loving hearts.

As he commented: "We share a compelling belief that working is not just working and earning a living. We have joy and fun in serving that enriches our lives by building a good relationship with our beloved guests and community. We take pride that we are helping to build Collingwood that is a better place to live and grow."

Congratulations to Larry on this well-deserved honour and recognition of his caring heart.
Staff Christmas Gifts Distribution
A Christmas pivot at Living Water Resorts.

For many years our CEO and Founder Larry Law and our executive team have hosted an annual Christmas luncheon at the Bear Estate. With the COVID restrictions in place this year, we were unable to host the event.

Instead, Larry made the decision to present each resort team member with a winter jacket and a gift card. Also, a nice lunch box, prepared by the Lakeside Seafood & Grill team, was also given to everyone.

Larry's message to each staff member was: "Unfortunately, we are not permitted to enjoy our traditional Christmas Celebration dinner this year. I do wish to offer you a special gift from my loving heart. I know this special Living Water jacket will keep you warm on cold days and that warmth will bring a smile to your face, just as you bring a smile to the face of each other and our guests."

Snowshoeing and Cross Country Skiing
Enjoy complimentary cross-country ski or snowshoe rentals and enjoy miles of trails starting just minutes from the resort, or stage an all out snowball fight in our spacious courtyard. I have been working in this company for the last 6 years. I love to work in this company. I have learned a lot here. The company has always provided ways for me to improve and move forward. I started by cleaning rooms and now I'm the Housekeeping Manager. I believe that my career is because of the nurturing company culture and its leaders.

Our CEO Larry Law, Vice President Donald Buckle, and HR Director Matt Pearson are always there for support and teaching me new things. 

I am still working during the Pandemic time. I have learned how to support and give strength to team players in this time. We are still contacting team members who are laid off by Zoom calls.

There are so many interesting stories in my journey of 6 years about how this company helped workers who have financial and other challenges. There are so many programs to help us. For example food boxes, gift hampers, caring hand programs, baby showers etc.

I am thankful to work for Living Water Resorts.

How long have you worked at Living Water Resorts and what made you stay?
 
I joined five years ago following my retirement from the industry as a Managing Partner of a Resort Marketing company in Mexico. In 2014, I joined the resort as a consultant by my long-time friend and colleague Executive Vice President Warren Smith. Warren and I have an over 20-year history having worked together on other projects. When I was asked to help rebuild what was then Cranberry Resorts Timeshare Division I was happy to help.

Warren and I have always shared a vision of doing Timeshare and Shared Ownership with honesty and integrity. Once here I was happily surprised at Larry Law's commitment to actualize this vision.  This commitment positively influenced my decision to join full time and help serve this shared Vision of what servant leadership and caring hearts company culture can accomplish.

From the rebranding of LWR to the current reworkings of Vitality Vacations, I am truly blessed to be a part of this dynamic revival within LWR and its current successes.
 
What have you done during the Pandemic and what did you learn?
 
The pandemic was obviously a terrible situation for everyone and one which we had no control over. But, as I’ve learned during my career, you should not worry in an emergency situation But you should plan, manage and execute. Importantly, look for the hidden blessings and opportunities, and life lessons.

As they say “God is either Teaching you or Blessing you”. In this case, I believe we received both.

It taught us how we needed to slow down on the “busy” and stay focused on the important
Faith, Family, and Friends. This refocus has never made our products or our company more relevant; in people refocusing their priorities of time together with family and creating new and authentic memories together. This caused a wonderful new demand and have blessed us with a renewed interest in vacationing, that I haven’t seen in almost 30 years in the industry.

 
Chef Emily's Recipes From Our Kitchen
Bearnaise Sauce

Ingredients:

  • 1⁄4 Cup (60ml) White Wine Vinegar
  • 1⁄2 Cup (125ml) White Wine
  • 2 Shallots Chopped
  • 1 Sprig Tarragon
  • 4 Egg Yolks
  • 3⁄4 Cup (180ml) Butter, Melted & Cooled
  • 1 TBSP (15ml) Chopped Tarragon
  • Salt & Pepper

Instructions:

  1. Bring vinegar & wine to a boil with shallots & tarragon sprig, season. Reduce until 3tbsp remains. Strain.
  2. Over a double boiler, whisk egg yolks until thick & foamy.
  3. Remove from double boiler off the heat, drizzle in butter, whisking consistently, add chopped tarragon. If too thick, add hot water.
  4. Keep at room temperature until ready to use. (Cover with Saran).
  5. If need to reheat, put back over double boiler.
Carrots

Ingredients:

  • 2 Cloves of Garlic, Minced
  • 1⁄4 Cup Olive Oil
  • 1⁄4 Cup Maple Syrup
  • 1 TBSP Harrissa Paste (Red Chili, Garlic, Lemon)
  • 2 TSP Cumin Seeds
  • Salt & Pepper
  • 2 1⁄2 LBS Carrots, Thinly Sliced
  • 1 Lemon

Instructions:

  1. Pre Heat Oven to 450 Degrees.
  2. Whisk garlic, oil, maple syrup, harissa, cumin seeds.
  3. Toss carrots & lemon with mixture, season.
  4. Roast & Toss occasionally, until carrots are tender, 35-40 min.
  5. Toss with parsley or chive for garnish.
