Client Close Up: Jeanne Harkins
I was born in CA, moved to NY, but spent most of my childhood in Knoxville, TN. I enjoyed playing soccer and running, most of my life. I went to The University of TN (Go Vols!) majoring in Marketing with a career in Pharmaceutical sales. I have spent the last 15 years raising two daughters; Holly, a junior at UT and Sydney, a Jr in high school. I am hoping to retire with my husband, Bert, to Charleston, SC. I love cooking, making flower arrangements, and helping others.
Favorite Pilates Exercise: Short Spine
Favorite Pilates Apparatus: Jump Board
Most Challenging Pilates Exercise for you: Snake
Least Favorite Apparatus or Prop: I like them all, especially the ball, and I love that Kelly mixes it up so much!
Why do you take Pilates at Strong Tower?: I initially came to Pilates because I was having consistent lower back pain which was hindering me from exercising. Thanks to Kelly for paying very close attention to my needs with my back, I am now exercising everyday and back on the tennis court! I have made Pilates a priority in my life to keep my core strong which protects my back. Thank you Kelly! I also love working out with such close friends, and so many laughs. I look forward to our class every week.

Orzo Salad
by Jeanne Harkins
Ingredients:
1lb orzo
1 pint cherry tomatoes, (halved or quartered if large)
1/2 medium English cucumber, seeded and cut into small dice (about 1 cup)
1/2 cup pine nuts, toasted
1/4 cup extra-virgin olive oil
3 Tbsp finely chopped fresh basil
2 Tbsp finely chopped fresh italian parsley
2 scallions, finely chopped (white and light green parts only)
2 Tbsp tightly packed, finely grated lemon zest (from about 3 medium lemons)**
3 Tbsp freshly squeezed lemon juice, plus more as needed**
Salt
Freshly ground black pepper
Instructions:
Bring a large saucepan of heavily salted water to a boil over high heat and cook the pasta until al dente, about 8 minutes. Drain and rinse under cold water until cool. Drain the pasta well and transfer it to a large non reactive bowl.
Add the tomatoes, cucumbers, pine nuts, olive oil, basil, parsley, scallions, lemon zest and lemon juice and toss to combine. Taste and season with salt, pepper and additional lemon juice as needed. Serve chilled or at room temperature.
**Sometimes I skip the lemon zest and fresh lemon and use Kraft balsamic dressing.

Nutrition Partner: Jackie Dominas, R.D.
Are you interested in some one-on-one nutrition counseling? Maybe you have a group of friends who want to meet together for nutrition/lifestyle counseling.
My specialty is helping women find balance. To slow down, re-structure their current routine so healthy eating, stress management and movement don't get put on the back burner. Of course we will tackle diet however, I will not be providing meal plans but helping you learn how to plan meals for the week, what products/produce to choose, what to eat when dining out, how to look at foods as nourishment vs calories and tools to making a home-cooked meal in 30 minutes or less. We'll also uncover the hidden reason you overeat, eat unhealthy foods and how to tune into your body's signals.
Thank you!
Jackie

Kelly's Essential Oil Corner
With cold and flu season upon us, I'm featuring my favorite EO that I use EVERYDAY.... It's Young Living's trademark oil called
Thieves Oil. This oil was developed based on the legend of four thieves who were robbing graves of those who died from an influenza epidemic in the 15th century. The thieves wore a blend of five herbs to prevent contracting the flu. The herbs included Clove, Lemon, Cinnamon, Eucalyptus and Rosemary and are found in Young Living's Thieves Oil Blend.
This uplifting and energizing oil supports a healthy immune system, deodorizes and purifies the air, freshens laundry and works great as a household cleaner without harsh chemicals.
It can be used topically and aromatically. When I diffuse it at home, my daughter always says "it smells like Christmas!".
