We're Already Thinking Spring
At The Santa Fe School Of Cooking
Winter in Santa Fe has been sublime. Snow drifts down and then the sun comes out to clear our streets and sidewalks. But the brilliant blue sky is a promise of spring's arrival, so here at the Santa Fe School of Cooking, we've been busy crafting a spring class schedule that has something for everyone to enjoy!
If you just can't wait until spring has sprung to get your Santa Fe fix, you're in luck because February has some special treats!

If you're looking for the food of love, look no further! Our new Saturday, February 12th For the Love of Oysters Class is the perfect opportunity for savoring those briny treasures of the sea.

Our Bonus Classes are the year's most affordable culinary experiences so mark your calendar for Thursday, February 17th and Wednesday, February 23rd and help us taste-test our newest recipes.
When March arrives, we'll kick it off with one final Bonus Class on Friday, March 4th. This New Mexican/Spanish Fusion theme features Organic Baby Greens Salad with Apples, Candied New Mexico Pecans; Aged Spanish Manchego with a Sherry and Roasted Pecan Vinaigrette; New Mexico Style Paella with typical ingredients such as Chicken, Shrimp and Spanish Chorizo with the addition of Hatch Green Chile and New Mexico Red Chile with Saffron Aioli. And we top it off with Tarta de Santiago, an almond citrus cake from Galicia, served with Santa Fe Sweet Spice/Vanilla Whipped Cream and Raspberry Coulis!
On the schedule are some of our guest favorites! Two Native American Classes with James Beard award winner Chef Lois Ellen Frank share the wisdom and history of America's indigenous cooking traditions.

The Native American I Class menu showcases Blue Corn Gnocchi Arrowheads with Guajillo Chile Sauce; Seasonal Greens with Jalapeno Dressing; Lamb-stuffed Rellenos with Tomato Sauce; and Sweet Frybread with Seasonal Berries and Prickly Pear Syrup. Our Native American II Class features Trout with Herbs and Bacon Baked in Clay; Wild Rice Saute; Sauteed Rainbow Chard; and a Berry Crisp. 

And for a look at more recent history, our Cooking Inspired By Georgia O'Keeffe takes you on a guided journey through some of the artist's recipes hosted by Margaret Wood, O'Keeffe's longtime assistant.
Tacos, Tamales and Rellenos will all make starring appearances, and you simply can't go wrong with any of these traditional New Mexico dishes.

Hands-on classes throughout February, March and April include Tacos and More Tacos, Tamales and More Tamales and Rellenos. Register early because space is limited for these hands-on experiences.
Having a party and need some appetizers with a Southwestern zing? Join us for our Southwestern Appetizers class! Love the classics or ready for something a little more contemporary? Our Traditional New Mexican and Southwest Contemporary Classes do the trick! Need a special brunch for a spring holiday? Our Southwest Breakfast Class is the answer!!

Our Covid Policy: Keeping our staff and customers safe and healthy is a top priority for us. New Mexico's mask mandate when indoors is currently in place, and we respectfully request that guests please continue to wear a mask while shopping in our Market or waiting to be seated for Cooking Classes.
For cooking classes: Guests are required to provide proof of vaccination (hard copy or on phone) upon checking in for class. We also accept proof of negative Covid test results taken within 48 hours of any event.
