Recipe: Savory Roasted Chicken

This is a classic, comforting dish that brings out the best in simple ingredients with its rich, aromatic flavors and crispy skin. This is perfect for a family dinner or a holiday occasion when you don't need to cook for a huge number of people. This recipe involves seasoning a whole chicken with a blend of herbs, garlic, and butter, then roasting it to golden perfection. The result is tender, juicy meat with a crispy outside. Serve with roasted vegetables or with your favorite side dishes.


Ingredients 10 servings

  • 1 whole chicken from Louie's (about 4-5 lbs)
  • 3 tbsp melted butter
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1 lemon, quartered
  • 4 cloves garlic, peeled
  • 1 onion, quartered
  • Fresh rosemary or thyme sprigs (optional, for garnish)



Directions

  1. Preheat Oven to 375°F.
  2. Prepare Chicken: Pat the chicken dry with paper towels. Rub the outside and inside of the chicken with melted butter.
  3. Season: In a small bowl, mix together the dried thyme, dried rosemary, garlic powder, onion powder, paprika, salt, and black pepper. Rub this seasoning mixture all over the chicken, including under the skin if possible.
  4. Stuff Chicken: Stuff the cavity of the chicken with the quartered lemon, garlic cloves, and onion. These aromatics will infuse the chicken with extra flavor as it roasts.
  5. Roast: Place the chicken on a rack in a roasting pan, breast side up. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature of the chicken reaches 165°F and the skin is crispy and golden brown. Baste the chicken occasionally with its own juices to keep it moist.
  6. Rest and Serve: Remove the chicken from the oven and let it rest for 10-15 minutes before carving. Garnish with fresh rosemary or thyme sprigs if desired.
