Hwy 63 Bridge Closed
Construction Update
The Highway 63 bridge just south of Louie's Finer Meats is closed for the forseeable future.
*If you're coming from the north, you can drive to us as normal.
*If you're arriving from any other direction and would usually use the Highway 63 bridge, find an alternate route - the shortest route is to follow our detour signs going north on 8th Street from Highway 48, 1.5 miles east of Cumberland. Program Louie's into Google Maps or your favorite GPS app.
*If you are walking or riding a bike, there is a pedestrian path through the construction area.
Please note that the official bridge detour will not bring you to us, so be sure to watch for our signs instead. It is a short, scenic drive that adds only about 5 minutes to your normal trip.
We truly appreciate your patience, your support, and your extra effort to keep shopping local. As always, please drive respectfully near our neighbors. The alternate route is not designed for high speeds. We'll see you on the other side.
Heading north? You will be able to go straight north from here on Highway 63 without returning to the detour.
*There is also road work in progress on Highway 63 between Cumberland and Barronett, but the road will be open at all times with periodic lane closures - and less traffic than normal.

23 Wisconsin State Awards!
We recently attended the Wisconsin Association of Meat Processors convention in Madison, WI. Our team came home with 23 awards at the Wisconsin Specialty Meat Championships, presented on April 11: the Best-of-Show Trophy, 18 plaques, and 4 Honorable Mentions.

Recipe: To Die For Tacos
These tacos come alive with a rich blend of seasoned ground beef and chorizo, creating a deep, savory flavor that’s both bold and comforting. The chorizo adds a hint of spice and paprika warmth, perfectly complementing the juicy, well-browned beef. Wrapped in a warm tortilla, the filling is topped with fresh diced onions, and a squeeze of lime that cuts through the richness with a bright, zesty finish. Each bite is a satisfying balance of hearty meat, subtle heat, and fresh toppings—simple, crave-worthy, and packed with flavor.
- FOR TACO MEAT
- 1 lb Louie's Ground Chuck
- 1 lb Louie's Chorizo
- salt, to taste
- pepper, to taste
- Taco Seasoning, to taste
- TOPPINGS
- 1 large tomato, cut up
- 1/2 medium red onion, chopped
- 1 large avocado, chopped
- 1 bag shredded cheddar cheese
- shredded lettuce
- 1 container sour cream
- Salsa of your choice, mild or spicy
- Sliced Black Olives
- Lime slices
- TORTILLAS
- 1 package large tortillas
- canola oil for frying tortillas
Directions
- Step 1
- Fry ground beef and add salt and pepper to taste.
- Step 2
- Add chorizo and mix into the ground beef. Taste and add additional taco seasoning if necessary.
- Step 3
- Prepare all toppings and make a nice presentation if you are serving to company.
- Step 4
- To prepare tortillas, add enough oil to the pan to cover tortilla and heat to medium-high.
- Step 5
- With tongs, add tortilla to hot oil and count 8 seconds. Turn over and count another 8 seconds. Take end of tortilla and fold in half and count another 8 seconds. Turn over and count another 8 seconds. Take paper towel and drain oil from tortilla.
- Step 6
- To cooked tortilla, fill first with the ground beef, about two tablespoons.
- Step 7
- Add cheese on top of meat.
- Step 8
- Add onions if you like.
- Step 9
- Add chopped tomatoes.
- Step 10
- Add chopped avocados.
- Step 11
- Add shredded lettuce and sliced black olives. Squeeze some lime juice if desired.
- Step 12
- Add sour cream and salsa. Serve!
