Delicious Medicine with The Naturopathic Chef
This month's question for "The Medicine Chef" Tina Martini:

Question: Black-eyed peas aren't very popular where I live and I love them. Are they good for anything besides "good luck" on New Year's Day? Do you have a salad or another way to fix them without meat?

Tina's Answer: YES! Check out my recipe for Cowboy Caviar on the MFN blog. Black-eyed peas are high in pectin -- a phytonutrient that keeps food in our stomachs longer, allowing for a more thorough uptake and use of nutrients. Pectin also lowers blood pressure and is a natural calming elixir to our muscle tissue.
