It's always helpful to find new side dishes and appetizers to brighten up your holiday table. Try this simple 4 ingredient recipe for Zucchini Proscuitto and Mozzarella Rolls to serve to your friends and family!
Ingredients
Directions
Preheat oven to 425 degrees.
Slice zucchini lengthwise into 1/4 inch long planks. Place in a microwave oven and cook for 2 to 3 minutes, until zucchini is just softened enough to roll into rolls, but not mushy.
Place zucchini planks on a flat surface and cover with proscuitto and mozzarella that are cut to fit. Roll up from one short end. Secure with a toothpick.
Pour marinara sauce into a 2 quart oven safe dish. Place zucchini rolls in the sauce, swirls facing up. Bake for 60 minutes. (Note: some of cheese will leak out into the sauce, but this is perfectly OK.) Serve immediately.

Green Beans are always a welcome dish every Thanksgiving, but here is a fun way to try something new and exciting using our Silver Palate Thick & Rough Oats. This dish, Green Beans with Savory Oat Streusel, will surprise and delight the masses.
Ingredients
½ pound fresh green beans
½ Tbs. butter, softened
½ C. Silver Palate Thick & Rough Oats
1 Tbs. olive oil
1 clove finely chopped garlic (about 1 tsp.)
Hefty Pinch of salt (to taste)
Hefty Pinch of black pepper (to taste)
½ C. finely shredded parmesan cheese
Directions
Heat oven to 350 degrees F. Spread Silver Palate oats in a single layer on a rimmed baking sheet, and toast them in the oven, stirring occasionally, until oats are very lightly golden brown. (about 10 minutes) Set aside while you prepare the green beans. Rinse the green beans and trim the ends off. Place beans in a steamer basket in a saucepan with 1 inch of water in the bottom. Steam the green beans over high heat, until done to your liking. Set beans in a shallow serving dish, toss with 1 tsp. butter, and tent with aluminum foil to keep warm.
To Finish Streusel. Heat olive oil until hot, in an 8 inch skillet over medium heat. Add garlic to hot oil and cook until golden brown, about 30 seconds. Add the toasted oats, a hefty pinch of salt and pepper, stirring to coat the oats. Cook for 1 minute. Add the parmesan and continue cooking until the topping begins to clump; stirring constantly. (About 1 minute.) Remove from heat, and sprinkle streusel over the steamed green beans. Serve hot.

ONYX Comes to Market with Grain Berry in 2017!

Texas A&M University has licensed Grain Berry to market its new ONYX sorghum directly as part of the Grain Berry program.
ONYX is a cross between high tannin sorghum and black whole grain sorghum. The high tannin sorghum is rich in tannins or procyanadins, much like the tannins in red wine, tea, walnuts, etc. and higher in total antioxidants than blueberries.
The black sorghum contains another type of antioxidants called anthocyanins. While many flowers and plants contain anthocyanins, the type in black sorghum is highly stable and is called 3-deoxyanthocyanins.
Why is that a good thing? It's believed that 3-deoxyanthocyanins is beneficial to deal with diabetes and prediabetes due to its slow metabolism and digestibility. By combining foods with 3-deoxyanthocyanins the entire metabolic rate slow down and helps prevent sugars and fat formation in the body.
Thus, high tannin sorghum is a great additive to grains, the combination of both high tannins and black sorghum (3-deoxyanthocyanins) doubles the bioactivity.
