It has been a very busy March from the Western Regionals in Oakland to getting ready for the upcoming Beef Seminar at RTC.  Time has just slipped by.  I know that I am not the only one that finds him or herself wondering where time has gone.  It seems to be the most common question in today's world and especially in our profession.  Too often we put our heads down and work towards a goal or a dream.  When we eventually raise our heads back up, we are shocked by find that years have gone by.

 

I have learned that to stay healthy of mind and body you need to do more than just work.  You need to laugh, to love, friendships and to experience life outside of work.

 

This is my prescription for a "Happy Chef" - "Quality of Life" is a great statement, but it is only a statement if you don't make it a personal priority in your life.

 

Our chapter goal this year is to increase our membership; specifically those professional chefs, which with a little motivation, will look up and join an organization that is all about the education of young culinarians; building chefs for the future. 

 

Keep this in mind - when you are dining out and see the Chef or Sous Chef don't be shy about inviting them to a meeting or dinner.

Washington State Beef Commission Seminar

Mark your calendar as you will not want to miss the upcoming seminar on Saturday, April 12th by the Washington State Beef Commission at Renton Technical College from 9:00am-1:00pm. It will be an informative seminar with cutting demos, hands on cutting stations and a buffet featuring grilled beef. This seminar is free to current members and costs $10.00 for non-members. We have a fantastic seminar coming up on April 12th at Renton Technical College sponsored by the Washington State Beef Commission. It will be an informative seminar with cutting demonstrations, hands on cutting stations and a buffet featuring grilled beef.  
 
This educational seminar is available to Professional Chefs AND Student Culinarians. Guest speakers will discuss "Beef. From Pasture to Plate." You will get an insider's view of the Northwest Beef Community from Ranch to Feed Yard to Packing Plant!  Cutting Demonstrations: Learn new Beef Alternative Merchandising (BAM) Cuts and Value-added techniques. View the process to remove teres major, Flat Iron, Chuck roll, and others. Attendee Hands On Cutting Stations. Included: Buffet lunch featuring Grilled Beef.  
 
Bridget Wasser is Executive Director, Meat Science & Technology in the Department of Science & Product Solutions at the National Cattlemen's Beef Association (NCBA), a contractor to the beef checkoff program, in Centennial, CO. Her responsibilities include developing and leading the checkoff's beef quality/taste research program, research project management, research dissemination, managing technical activities for the Beef Innovations Group, innovative cut exploration, cutting demonstrations, and product education.  Bridget received a B.S. and M.S. in Animal Science with a focus on Meat Science from Texas A&M University and has been on staff since November of 2005.

2014 ACF CULINARY SALON COMPETITION

The Washington State Chefs Association will be having their annual Culinary Salon on Saturday, May 17th, 2014, hosted by Le Cordon Bleu Seattle. This is an ACF sanctified competition where students and professionals will have the opportunity to compete in many different categories. We hope that you will demonstrate the best of your culinary skills and knowledge at this exciting event.
