The art of making sausages is one of the oldest techniques of cooking. At Mountain View Meat Co. in Stilwell, Oklahoma, the Phelps family has been making their family recipe of sausages the old-fashioned way for more than 40 years and three generations of family. Each sausage is touched by hand to ensure both quality and taste in every bite. Today, Mountain View has grown into a state-of-the-art sausage manufacturing facility distributing those famous hot links regionally throughout the Gulf Coast and Midwestern part of the United States. Suitability of Sodium Acid Sulfate as an Antimicrobial Intervention for In-shell Walnuts

Contaminated walnuts have been implicated in four foodborne illness outbreaks associated with Salmonella. This research investigates the use of a novel Generally Recognized as Safe compound, sodium acid sulfate, as an antimicrobial intervention for the walnut industry. Findings to date suggest sodium acid sulfate is an effective antimicrobial in walnuts, and the presence of organic matter does not impact the antimicrobial efficacy of sodium acid sulfate.
