Recipe of the Month:
Mexican Street Corn-Inspired Salad
Inspired by elote, this plant-based salad can be served as a side, as a dip with tortilla chips, as a green salad topping, or as a taco filling. Did you know corn contains carotenoids that are beneficial to eye health and fiber that aids digestion? Vitamin C from the red pepper helps your body absorb the iron in the beans. This nutritious salad is full of flavor and texture! For more recipes, visit Cook Well Berkeley!

National Nutrition Month
What is a RD/RDN?
Registered Dietitians (RDs) or Registered Dietitian Nutritionists (RDNs) are interchangeable terms for credentialed practitioners who have a minimum of an undergraduate degree (or graduate degree, starting in 2024) from an accredited dietetics program, completed a supervised practice requirement, passed a national exam, and continue professional development throughout their careers. According to eatright.org, there is no specific, standardized meaning for "nutritionist." Anyone can call themselves a nutritionist, and unfortunately, unqualified health care recommendations can cause people harm. So whether someone calls themselves "dietitian" or "nutritionist," check for credentials to ensure they are qualified nutrition experts.
Here are a few reliable nutrition resources: Be Well at Work Wellness Program’s Nutrition Resources and Ask the Dietitian, UHS Student Nutrition Resources, and Find a Nutrition Expert from eatright.org.
Fun Fact: Did you know that UC Berkeley employs several registered dietitians? They work in departments such as Nutrition Sciences & Toxicology, Berkeley Dining, Athletics, School of Public Health, and University Health Services.
