Eating well can support your overall health, mood and body before, during and after cancer treatment


When facing cancer, it's vital to prioritize your body's care, ensuring it receives the necessary fuel for healing and recovery through proper nutrition. The Hope Chest for Breast Cancer Foundation understands the importance of nutrition as it relates to cancer. That's why one of the ways Hope Chest supports active patients is through providing gift cards to local grocery stores to ensure they have the funds they need to put healthy food on the table for themselves and their families. In honor of National Nutrition Month, we have included one of the recipes from The National Breast Cancer Foundation's (NBCF) Healthy Recipes for Cancer Patients eBook below.

Annie Cavalier, MS, RDN, LD explains, "This is the perfect recipe for when you are wanting something a little bit sweet but still nutritious. One of the reasons I love this recipe is that it is very soft, which makes it easier to eat when you have mouth sores (a common side effect from chemo). You can also add a little bit of protein powder to the batter to bump up the protein content. Toppings such as nut butters are also great options for boosting the protein and calories . Remember, when you have cancer, your calorie and protein needs are elevated."


Ingredients:

  • 1 banana
  • 2 eggs
  • ¼ cup oats
  • ¼ tsp cinnamon
  • ¼ tsp vanilla extract
  • Butter
  • Topping ideas: fruit, maple syrup, peanut butter


Directions:

  1. Place the banana, eggs, oats, cinnamon, and vanilla extract in a blender and blend until smooth.
  2. Melt butter in a pan until the pan is evenly coated.
  3. Pour the batter onto the pan (using 2 Tbsp to ¼ cup batter per pancake depending on what size you want them) and cook on low heat for 30-60 seconds.
  4. Use a spatula to push up on the sides, and if it does not feel like it is sticking to the pan, flip it over and repeat on the other side.
  5. Serve hot with your choice of toppings.

Hope Chest is there to help by alleviating financial strains and providing basic but important daily needs. I am incredibly proud to be a part of the Board to further this mission.”
