Celebrating Mom
Thank you to all who joined us last Saturday for Opening Day. It felt so good to see the community reconnecting with our farmers and makers. And in an instant the 'market magic' was back. The beautiful day was made all the sweeter by the sound of music in the air, and seeing people relaxing and dining on the riverfront... signs that we are gradually returning to normal and to the full Easton Farmers' Market experience.

This Saturday, we encourage you to bring your Mom, or shop for your Mom. You'll find spring delicacies like asparagus and rhubarb and pullet eggs. And scrumptious cheeses, pastured meats and decadent desserts and local wine for the perfect Mother's Day brunch. If you are the Mom,THANK YOU for all you do - come down and treat yourself to all your market favorites.
Lots of new market merch, including doggie apparel arriving this week. All proceeds help support market amenities, activities and events.

Apple Ridge Farm
Pullet Eggs!
Apple Ridge Farm is offering pullet eggs this weekend! So why are pullet eggs so special? Read what has to say...

"For the first time, Eataly NYC Flatiron is receiving a daily selection of these "farmer's eggs," a true springtime treasure. Because these are among the first eggs ever laid by the young hens, typically less than one year old, they contain the vital essences of the chicken, stored up for her entire life. No subsequent eggs will taste the same.

Our chefs could not be happier: they say that the pullet variety is the tastiest, truest expression of an egg. What they lack in size is made up for in rich, savory flavor. Like their larger cousins, pullet eggs are perfect for baking, deviling, or simply frying (over easy on asparagus? Yes, please)."

Double Duty

I like to meal prep during the week, even though I go home for lunch. It just makes my lunch break a little easier. This week, I went overboard and prepped an extra lunch salad, and this morning I realized that I could eat it for breakfast instead of letting it languish for one more day. So: into the pan went the spinach, beets, carrots, fennel, and chickpeas. I added an egg to make it more breakfast-y, and viola! A hearty start to the day. It was a good reminder of how versatile food is! Greens like spinach, baby kale, or baby chard can pull double duty, appearing cooked or raw. My beets were already roasted, but warmed up nicely. And most other fresh veg, like the carrots and fennel can go warm or cold too. Side note: fennel is, in my opinion, a much-overlooked vegetable that really shines when sliced paper thin in salads. So let your veg do double duty this week!
