Fiesta Steak Salad
Ingredients:
Sirloin steak
Fiesta/Southwest Seasoning
Salad greens
Fresh cilantro
1 lime
1/2 c. olive oil
3/4 c. mayonnaise
1/4 c. milk
shredded cheese, tortilla chips, salsa, etc.
Directions:
Combine juice of lime, olive oil, and 1 Tablespoon Fiesta Seasoning. Marinate sirloin in this mixture for 1 - 4 hours. Whisk together mayonnaise, milk, and 1 Tablespoon Fiesta Seasoning. Refrigerate until ready to dress salad. Preheat grill and cook marinated sirloin until desired doneness is reached (I recommend medium rare-medium). Allow meat to rest 10 minutes before slicing against the grain. Place sirloin pieces on a bed of salad greens. Dress as desired with Fiesta dressing, cheese, crumbled chips, and salsa. Garnish with finely chopped cilantro.
