Dear ,

Hello, August - we are so glad that you have arrived!

In between my appointments this past Saturday, I visited Londonderry's West River Farmers Market and was surprised that produce usually found in early- to mid-August is delayed and everything seems to be a little late this summer. Perhaps it can be attributed to the wet early summer, perhaps the dry period we've experience these past few weeks. I can only hope that everything catches up and we'll have fresh produce for a few extra weeks this fall.

Mary Mitchell Miller Real Estate has continued to have a very productive summer. We have been busy listing, showing and selling properties and have a number of exciting new listings to share with you this month. And, now that there is a touch of fall in the air (and some tinges of orange and red in the trees), we have customers already thinking about the upcoming ski season with the hope of buying a vacation home property to enjoy this winter.

Please note that there will be no newsletter in September. Due to a busy summer and upcoming vacation schedules, we will be taking a much-needed break. Please keep an eye out for the October/November issue of the newsletter, which will hit your inboxes in mid-October. But, don't worry; this issue's calendar of events has been expended to cover a few things to do in late September and early October so you will not miss out on any fun local activities.

Be well and enjoy the end this beautiful summer!

Area Welcomes TWO New Frisbee/Disc Golf Courses
Exciting news Frisbee lovers! There are two new disc golf courses in the area - one at Magic and the other in Chester. This new sport is making its presence known and locals are excited to have not only new recreation options but two exciting courses to choose from.
Chester - The Chester Recreation Department offers a FREE 9-hole Disc Golf course located on Lovers Lane Road near the Town Pool. Like regular golf, disc golf often offers multiple tee boxes (for beginner and advanced players), and the Chester course is no different. The course is mostly played in the woods with lots of trees in play. The course is free and is available for year-round play. For more information, check out the Chester Disc Golf Club's Facebook page.
Londonderry - Magic Mountain's National Disc Golf Course will open to the public on August 18th. The course offers 9-holes and will crisscross through the lower part of the mountain on several trails and through the woods. The fee to play is just $5 if you have your own disc or $10 with disc rental if needed. Magic has plans to expand the course to a full 18-hole course in the near future. Information available on Magic Mountain's website.
To get the party started, Magic will be hosting the 1st Annual Master Magician Golf Biathlon on September 1. It's a 2-person team event with 36 team spots available to play 9-holes of golf (at Tater Hill Golf Course) followed by 9-holes of Disc Golf at Magic. There will be a BBQ and live music at the Black Line Tavern afterwards and all proceeds will benefit the UVM Children's Hospital.

Green Mountain Gourmet
Summer Basil Pesto
  • 4 cloves of garlic (peeled)
  • 2 cups of tightly packed fresh basil leaves (washed and dried)
  • 1 cup loosely packed flat-leaf parsley (washed and dried)
  • 1/4 cup toasted pine nuts (may be omitted if you have a nut allergy, but they add a nice dimension)
  • 1/2 cup freshly-grated Parmesan cheese
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon crushed red pepper flakes (these may be omitted, but they add a nice dimension)
  • 3/4 cup good extra virgin olive oil
 1) In a food processor fitted with the metal blade, chop the garlic into very small pieces.
 2) Add the basil, parsley, red pepper flakes and pine nuts. Pulse well, into a finely-chopped mixture.
 3) With the top on and using the feed tube, slowly add the olive oil and blend well in a rough paste.
 4) Add the salt and Parmesan cheese and pulse lightly until just barely blended. Don't pulse too much!
This recipe makes about 1.5 - 2 cups of pesto and can sauce two pounds of pasta when mixed with ¼ cup of the pasta water to loosen the pesto sauce.

Note: This recipe can be stored in the refrigerator for one week or frozen for several months.
Buon Appetite!
