Cooking with Dr. MaryAnn

Last year, I gathered some of the best family recipes from members of my family and compiled them into a cookbook which I then gave them as gifts. This book has already become an heirloom. I'd like to share with you one of my favorite recipes from the cookbook. I hope you enjoy it as much as I do.
Broccoli Rabe with Cannellini Beans & Black Olives
2 bunches fresh Broccoli Rabe with the stems remove.
2 cans cannellini beans
2 cans sliced black olives
Salt, pepper, and hot pepper flakes (if desired)
4 cloves garlic
Grated Parmesan cheese
1 lb. cavatelli or gnocchi (or your pasta of choice)
Olive oil
In a large pan (I use a wok), place the olive oil and sliced garlic. Start cooking. Add the rinsed, raw broccoli rabe and allow it to start cooking. Turn frequently.
Add the contents of one can of beans with the water to a food processor and pur�e. Add this to the broccoli rabe. Rinse the processor with the water from the second can and add to the broccoli rabe along with the beans from the second can.
Drain the sliced olives and add. Season to taste, and allow to cook until some of the liquid has cooked off and the broccoli rabe is really soft.
Cook pasta as desired. Drain and add to the above mixture. Serves 6-8. Enjoy!
