Amaranth - May Grain of the Month


May is Celiac Awareness Month, so a perfect month to feature the naturally gluten-free, "super-grain" Amaranth. Though given the title "super grain", amaranth is technically not a grain at all. It is the seed of a tall plant with broad green leaves and bright, colorful flowers.

Amaranth, like quinoa and buckwheat contains all the essential amino acids and thus provides complete protein. It has a relatively high proportion of the amino acid lysine, generally deficient in most cereal grains, making it one of the best sources of vegetable proteins, hence the title, "super-grain".

In addition to being a great protein source, according to the Whole Grains Council, amaranth contains more than three times the average amount of calcium and is also high in iron, magnesium, phosphorus, and potassium.  It's also the only grain documented to contain Vitamin C. Amaranth can be boiled and eaten as a porridge, popped for a delicious snack or ground into flour for quick breads. Amaranth has a slight earthy flavor so is best used with chocolate or citrus. My favorite gluten free combination for quick breads is amaranth and sorghum.

Whether you need to be gluten free or not, May just might be the perfect time to enjoy the Lemon Poppy Seed Bread from my The Essential Home Ground Flour Book.  The zesty, citrus flavor of lemons just seem to say "spring is here".

Lemon Poppy Seed Bread

The combination of amaranth and sorghum flour gives the perfect texture to this naturally gluten free bread. The tang of the lemons comes through beautifully with the mild flavored flours. More like a cake than a bread, this will become a family favorite whether you need to be gluten free or not.

Makes 6-8 mini loaves or 12 muffins

Preheat oven to 375F

Mini loaf pans or muffin pans, greased or lined with paper

*    3/4 cup amaranth flour     
*    3/4 cup sorghum flour     
*    1/2 tsp baking powder         
*    1/2 tsp baking soda
*    1/2 tsp salt     
*    1 tbsp poppy seeds     
*    Zest of 1 lemon
*    Juice of 1 lemon
*    1 cup honey granules     
*    1/2 cup olive oil     
*    2 eggs     
*    1 ripe banana, mashed     
*    2 tsp lemon extract     

In large bowl, combine amaranth flour, sorghum flour, baking powder, baking soda, salt, poppy seeds and lemon zest.

In the bowl of an electric mixer, beat lemon juice, sugar, olive oil, eggs, banana and lemon extract until fluffy.

On low speed, add the flour mixture 1/2 cup (125 mL) at a time, until thoroughly combined.     

Scoop batter into prepared mini loaf pans or muffin pans. Bake 20-25 minutes. Let cool for 5 minutes before removing from the pan.    

Tip - These are perfect baked as mini-muffins. Just the right bite of lemony sweetness. Makes about 30 mini-muffins.

It is with great excitement that Haitian Pastor Djumy Septembre of Christian Action Relief for Haiti (C.A.R.H.A.) will be our special guest.

God has provided the land, all the bakery equipment and a great team of bread bakers. NOW ALL WE NEED IS THE BUILDING.

Please join us as Pastor Djumy and Sue Becker share about this ministry and their plans for a bakery in Gonaives, Haiti.

Not only will the bakery continue to bake freshly ground whole grain bread to feed over 900 school children and the 25 children that live at the orphanage but will also provide this nutritious bread and jobs for the community.

Strategically located next to the  Mango Tree Church, the bakery will serve as an outreach opportunity to share the Real Bread of Life, Jesus Christ.

Co-ops are a great way to get your grains and other supplies that are just too expensive to ship any other way.  Current co-op shipping rates range from 12 cents to 15 cents per pound (depending on distance from our warehouse) when we deliver on our own truck, compared to UPS rates that can be around 60 cents a pound!
