Characterizing the Color Compounds Present in Rubaiyat Wine as a Function of Skin Contact Time during Fermentation

William McGlynn, FAPC horticultural processing specialist, focuses on improving the quality of vineyards and wineries in Oklahoma. A recent project assessed the degree of pigmentation and characterized the pigments extracted into wine made from Rubaiyat grapes with different skin contact times. A thesis, written by graduate student Parker Wilson, has been published. The research demonstrated pigment extraction was relatively linear over about three days of skin contact time, and pigment concentrations did not increase with further skin contact time.
