Recipe of the Month:

Marinated Tomato Poke Bowls

Marinated tomato takes on the flavor and texture of poke (raw marinated fish), which is great for anyone who doesn’t eat fish, doesn’t have access to good raw fish, has a fish allergy, or just wants a budget-friendly alternative! The other toppings in this recipe can be fully customized to your tastes. For more recipes, visit Cook Well Berkeley

Feel Good with Fiber this Summer!

By: Carol Thally, UC Berkeley Dietetic Intern

Fiber is a powerful nutrient that supports digestion, helps regulate blood sugar and cholesterol levels, and keeps you feeling full and satisfied. You’ll find fiber mostly in plant-based foods like fruits, vegetables, legumes, and whole grains.

With warmer days ahead, it’s the perfect time to enjoy fresh, seasonal produce that's naturally rich in fiber! Here are five fiber-filled fruits and veggies to add to your summer meals and some recipe ideas to try:

  • Kiwi – A tangy tropical fruit packed with fiber, vitamin C, vitamin K, and vitamin E.
  • Strawberries – Sweet and juicy, they’re a great source of fiber, vitamin C, potassium, and folate.
  • Spinach – This leafy green is a powerhouse of nutrients including fiber, vitamins A and C, iron, and magnesium.
  • Turnips – A versatile root vegetable loaded with calcium, fiber, phosphorus, and potassium.
  • Asparagus –This spring favorite is full of fiber, antioxidants, and vitamins A, C, E, and K.

Looking for more delicious ways to enjoy these foods? Check out Cook Well Berkeley for seasonal high-fiber recipes!
