Hopefully everyone is all dug out by now! Our trucks are on the road picking up the items for this week's bag. We were concerned that some of the Amish driveways might not be passable today; but no amount of snow is too much for some determination and "technology." By technology, I mean a snow plow blade attached to a "forecart" pulled behind a team of horses. A big thanks to all the farmers for helping us get in and out easily today!

This week's bag is quite exciting and we have about 20 extra to spare. We also have a new Beer Cheese Dip, perfect for snacking during next weekend's game.

BRINED TURKEY BREAST ROAST

Brined and ready to roast. 1 large breast from our pasture raised turkeys, brined in a balance brine of turkey stock, salt, sugar, black pepper, and fresh herbs.

Simply remove from brine. Pat dry. Brush skin with oil/butter and roast on a resting rack until internal temp is 155. Pull and let rest on cutting board before carving.

The fun part about the winter share is that we get to spend some extra time working on special projects.

This week's bag is a turning point in the season. Most of the storage crops are nearly gone. Potatoes are about all that's left in the cellar. In the cold frames, the spinach and greens are frozen solid. They'll recover fine with some sun and heat, but that's a month away. As the days get longer, we'll see our farmers transitioning their production assets into preparing for the growing season. Greenhouses will be full of trays of seedlings and cover crops will be plowed under in early spring.

For our upcoming bags, we have lots of fun features coming. These include prepared items like soup, quiche, and pepperoni rolls. It also includes canned goods and more meat, with themes like meatloaf week and pot roast week coming.

This week's bag has a few feature items, including:

Smoked Chicken Wings - we start with a brine of chicken stock, mirepoix, salt, sugar, and spices. The wings are then tumbled in the brine under vacuum, then tossed with a salt-free seasoning and smoked thru. These wings are ready to roast in the oven, grill, or sauce up in a hot pan.

Homemade Meatballs - grassfed beef, heritage pork, a panade of A2 milk, whole wheat bread, and farm fresh eggs, mixed into the meat with sweated onions, parmesan cheese, and shredded mozzarella. Hand rolled and ready to cook. Raw.

Tomato Sauce - canned at the peak of tomato season for a mid-winter treat.
