Good Morning Trevor!


I hope everyone had a good Easter celebration. We had family over and I had the chance to cook a big meal. I was struggling to find inspiration outside of my usual winter comfort zone of meat and potatoes. Then one day last week we were walking the dogs thru the woods and saw the tips of something green. Yes, it was ramps. So I kept checking their progress thru the week, and by Sunday morning I was able to go dig a bucket full.


I wish I could say the whole patch was ready, but it wasn't. And my patch isn't nearly large enough for Fresh Fork...just my personal over-consumption. Our foragers are reporting that their ramps are too small to commit many. I expect this week with the rain and some warmer temperatures we'll see them mature. We will have enough ramps this week for our vegetarian members, then we should have ramps for all the next delivery cycle.


This week we revert back to a popular late-winter season bag - our Meatloaf bag. This is the toughest time of the year for us to build bags of any produce, so we plan in advance and work on some other ways to fill the bag .


For example, this week we have:

  • Pepper Butter -- one of our team's favorites. This mustardy-pepper spread is great on a variety of foods. You can add it to a sandwich, I like it for my eggs in place of ketchup, dip with chips/crackers and cheese, or for this week's bag as a sauce with meatloaf. It has a bit of heat to it from the hungarian peppers, but isn't too spicy. The name can be deceiving because there isn't any butter in this product.
  • Mushrooms -- shiitake mushrooms for all
  • Homemade gravy and bread crumbs - to complete your meatloaf
  • Bread and Butter Pickles - enjoy on a meatloaf sandwich, or follow our recipe below to use them as the "secret ingredient" in a special meatloaf.

Bacon and Eggs - Just $13


We've been short lately on both bacon and eggs. It's the cycle of the farm and demand. They don't always line up.


Well, we've been harvesting a lot of hogs to get ready for summer. So, we are stocked up on bacon.

MEATLOAF

If you're looking for a little spin on a traditional meatloaf recipe, this one includes the Bread & Butter pickles from the bag.


- Preheat oven to 350* F

- Crumble the beef and pork into a medium sized bowl

- Add onion, garlic, egg, ketchup, mustard, pickles, pickle juice, worcestershire sauce, pepper, and salt (recipe details here).

- Mix well to combine

- Add breadcrumbs and mix again to stiffen up the mixture

- Grease a loaf pan with a little bit of oil or butter

- Place meat mixture into pan, and press to fill the pan

- Bake for 35-40 minutes or until internal temperature is 155*

- You can glaze the meatloaf once it's cooked and out of the oven, or add onto slices once you've put it on a plate.


To Glaze: Make a mixture with ketchup, mustard, brown sugar and cider vinegar for a glaze. Recipe for glaze can be found HERE.


For a nice presentation with the ketchup-based glaze, when the meatloaf is done baking, remove from pan and flip over onto an oven-safe tray. Evenly spread glaze over the top and sides of the meatloaf. Return to the oven for a few minutes until glaze is bubbly. Remove from oven and top with pickle slices, cheddar cheese, crumbled bacon, or whatever toppings you wish.
